I propose a simple and delicious recipe, perfect for a family dinner or a meal with friends. This classic dish, country-style potatoes with chicken thighs, combines the intense flavors of roasted vegetables and the juiciness of the meat, offering an unforgettable taste that will remind you of home-cooked meals, just like grandma used to make.
Ingredients:
- 4 chicken thighs (you can also use chicken breast if you prefer)
- 800 g potatoes (choose starchy potatoes for better texture)
- 2 medium onions
- 3 tablespoons sunflower oil (or olive oil for a stronger flavor)
- 1-2 cloves of garlic (optional, for added flavor)
- 1 teaspoon sweet paprika
- Salt and pepper to taste
- A bunch of fresh parsley for garnish
Instructions:
1. Preparing the ingredients: Start by washing the potatoes well under cold running water, making sure to remove any impurities. Boil them in salted water, leaving the skins on. This will help retain the flavors and nutrients. Boil for about 15-20 minutes until they are slightly soft but not fully cooked – we want them to hold up when frying.
2. Preparing the meat: In the meantime, prepare the chicken thighs. Wash them well and pat dry with a paper towel. You can marinate them with salt, pepper, and a little olive oil for a stronger flavor. If desired, you can also add herbs like rosemary or thyme.
3. Sauté the onion: In a deep skillet, add the 3 tablespoons of oil and let it heat up. Chop the onion finely and sauté it in the hot oil until it becomes golden and translucent. You can add the chopped garlic in the last minutes to retain its flavor.
4. Fry the chicken thighs: Add the chicken thighs to the skillet, frying them for about 8-10 minutes on each side until they are golden and crispy. Make sure they are cooked evenly and the juices run clear.
5. Cut and fry the potatoes: Once the potatoes are boiled, let them cool slightly, then peel them. Cut them into slices or cubes, depending on your preference. Add them to the skillet over the chicken thighs and onion, sprinkle with paprika, salt, and pepper, and gently mix to combine all the flavors. Fry everything for 10-15 minutes until the potatoes are golden and crispy.
6. Serving: Once your dish is ready, transfer it to a platter. Sprinkle fresh chopped parsley on top for added freshness and color. This dish is served hot, alongside a green salad or pickles for a delicious contrast.
Practical tips:
- For a heartier version, you can also add carrots or bell peppers to the skillet, which will fry alongside the chicken and potatoes.
- If you prefer a spicy note, you can add a little dried chili or even chili sauce during frying.
- Make sure the oil is hot enough before adding the ingredients to achieve an even and crispy fry.
These country-style potatoes with chicken thighs are a versatile and delicious recipe, perfect for any occasion. Enjoy the authentic taste of a family dish that will remind you of the warm meals of your childhood!
Wash the potatoes, boil them in their skins, then cut them as shown in picture no. 2. Fry the onion in 3 tablespoons of oil (you can add more if you prefer them greasier). Add the finely chopped red pepper and paprika. Fry until the onion becomes soft. Add the eggs and mix well (like for an omelet). Pour the sauce over the potatoes. I placed some chicken thighs (seasoned with pepper, paprika, veg-all, rosemary) in the oven for about 35-40 minutes, covered very well with aluminum foil. Once they are done, I added BBQ sauce, 3 tablespoons of water, 1 tablespoon of oil, poured the sauce over the thighs, and left them uncovered in the oven for another 10 minutes.
