Preparation time: 15 minutes
Cooking time: 45 minutes
Total: 1 hour
Number of servings: 4
Ingredients
- 500 g beef schnitzel
- ½ teaspoon freshly ground pepper
- 4 tablespoons sunflower oil
- 1 tin of sliced mushrooms (about 400 g)
- 1 medium onion, finely chopped
- 3 tablespoons flour
- 3 cups of soup made with 2 cubes of chicken Maggi (about 750 ml)
- 3 tablespoons unsalted tomato paste
- 2 tablespoons dry mustard
- 1 teaspoon dried oregano
- 1 teaspoon ground mixed spice (a mixture of nutmeg, cinnamon, cloves, ginger, bay leaf)
- 1 can Nestlé cream (about 200 g)
- a few sprigs of green parsley leaves for garnish
- salt to taste
Preparation
1. Preparing the meat: Start by salting, peppering and pounding the beef schnitzel. You can opt to leave them in larger pieces or cut them into thin strips, depending on your preference. Thin slices will absorb the flavors of the sauce better.
2. Sauté the mushrooms: Heat the sunflower oil in a non-stick frying pan. Add the sliced mushrooms and sauté for about 5 minutes, until golden. When done, transfer to a platter and set aside.
3. Saute the onions: In the same pan, add the finely chopped onions and sauté for about 5 minutes, until golden brown. The flavor of the onions will add extra flavor to the dish.
4. Frying the schnitzels: Using the same pan, fry the schnitzels for 3-4 minutes on each side until browned. This process will create a delicious crust that will add texture to the sauce.
5. Making the sauce: In a pressure cooker, add the fried schnitzels, sautéed onion, mushrooms, prepared chicken broth, tomato paste and seasonings. Close the saucepan and, when it starts to boil, reduce the heat to low and simmer for 30 minutes. This step will allow the flavors to combine perfectly.
6. Thickening the sauce: In a separate bowl, whisk together the flour and cream. Thin the soup mixture in the saucepan, stirring constantly to avoid lumps. Add this mixture to the saucepan (preferably strained) and simmer for a further 3-4 minutes, stirring continuously, until the sauce thickens. Add the finely chopped green parsley leaves at the last simmer.
7. Serving: Beef Stroganoff Slices are served hot with a side of mashed potatoes or rice with vegetables. The rich flavors of the sauce will combine perfectly with the fluffy texture of the mashed potatoes or crispy texture of the rice.
Practical tips
- For a more intense flavor: You can add 1-2 crushed garlic cloves when sautéing the onions. This will add extra flavor and intensify the dish.
- Variations: Instead of canned mushrooms, you can use fresh mushrooms, which will give a better texture.
- For a creamier sauce: If you prefer a richer sauce, you can add a little butter at the end, stirring well until incorporated.
- Frequently Asked Questions:
- Can I use pork instead of beef: Yes, pork schnitzel can be a delicious alternative.
- How can I make it easier: You can use ready-cooked or frozen meat, but be sure to thaw it completely before cooking.
- What drink goes best with: A dry red wine or lager are excellent choices to accompany this dish.
