Vegan chocolate cream cake

Dessert - Vegan chocolate cream cake by Lucretia O. - Recipia

Vegan chocolate cream cake has a cocoa and walnut sponge, soaked with syrup and covered in a thick cream emulsified from soy milk and oil. I use sparkling mineral water for the batter and leave the ground walnuts a little coarse; the soaked layers show when you cut a slice, the cream holds firm between them, and the crumb stays soft. Preparation: 30 minutes. Cooking: 48 minutes. Resting: 60 minutes. Total time: 138 minutes. Servings: 12. Approximately 580 kcal and 5 g protein per serving.

Ingredients

For the sponge

  • 1/4 cup (60 ml) oil
  • 1 1/2 cups sugar
  • 2 cups (480 ml) sparkling mineral water
  • 1/8 teaspoon salt
  • 3 tablespoons jam
  • 1/2 cup ground walnuts
  • 3 cups (720 ml) flour
  • 1 packet (10 g) baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon lemon juice
  • 3 tablespoons cocoa

For the chocolate cream

  • 150 ml soy milk
  • 350 ml sunflower oil
  • 1/2 glass (125 ml) powdered sugar
  • 3 tablespoons lemon juice
  • 4 tablespoons cocoa
  • 1 teaspoon vanilla essence
  • 1/8 teaspoon salt

For the syrup

  • 200 ml water
  • 3 tablespoons sugar
  • 1 teaspoon rum essence

Preparation

1. In a bowl, mix the oil, sugar, mineral water, salt and jam, just until combined. 2. Sift the flour with the baking powder and cocoa, then add them and the ground walnuts to the wet mixture. Dissolve the baking soda in the lemon juice, stir it in and mix until you have a thick cream-like batter. 3. Pour the batter into a 24 cm round pan lined with baking paper. Bake for 5-10 minutes at 220°C, then continue at 180°C until the total baking time reaches 45 minutes; a toothpick inserted in the middle should come out without raw batter on it. 4. Transfer the sponge to a wire rack and leave it to cool for 60 minutes. Meanwhile, put the water, sugar and rum essence in a small saucepan; boil for 3 minutes, until the sugar dissolves, then leave the syrup to cool for at least 20 minutes. 5. Put the soy milk, oil and powdered sugar in a tall glass, all at room temperature. Lower the immersion blender to the bottom and blend for 1-2 minutes without lifting it, then raise it slowly. Add the lemon juice, cocoa, vanilla essence and salt, then blend until the cream is smooth. 6. Cut the cooled sponge into three layers. Soak them with syrup, spread the cream between them and cover the cake with the remaining cream.

Notes

The jam should be thick, not runny; if it is very loose, use only the fruit and leave the liquid in the jar. Use only 3 cups of flour if the batter runs slowly, like thick cream; the cup size and type of flour affect the consistency. With the walnuts ground a little coarsely, you can still feel them in the crumb, while finely ground walnuts almost disappear into the sponge. If you need it ready for a set mealtime, start a few hours ahead, since cooling completely and assembling the cake take time. I also added chocolate pudding dissolved in juice over the first layer, but the cake can be assembled without it. The sponge contains gluten and walnuts; for a nut-free version, leave out the ground walnuts, and the sponge will be less rich. The cake keeps covered in the fridge for up to 3 days; take it out a little before slicing so the cream is not firm. Cut thin slices and serve them with black coffee.

Frequently asked questions

Why won't the cream come together?

Cold milk and oil can prevent the emulsion from forming. Put 1 tablespoon of room-temperature soy milk in a clean glass and gradually blend in the split cream with an immersion blender.

Can I replace the ground walnuts with hazelnuts?

Yes, use the same amount of ground hazelnuts. Their flavor goes well with the cocoa sponge.

Can I use still water instead of mineral water?

Yes, replace the mineral water with 2 cups, or 480 ml, of still water. Keep the same amount in the batter.
