Urdă cake with cherries, baked in a pan

Urdă cake with cherries (urdă is a soft Romanian whey cheese) is a creamy batter with cherries rolled in semolina and placed in the middle, baked in a pan. I only cut it when it has cooled completely in the pan, with a very sharp knife, and I don't rush it, even if it already smells good around the house. Preparation: 20 minutes. Cooking: 50 minutes. Total time: 70 minutes. Servings: 12. About 340 kcal and 10 g protein per serving.
Ingredients
- 300 g cherries
- 2 tablespoons semolina
- 500 g urdă
- 3 eggs
- 120 g butter
- 150 g sugar
- 250 g flour
- 1 teaspoon vanilla extract
- 1 packet baking powder
- 1/2 teaspoon salt
- 200 ml yogurt
- 200 ml sour cream
Preparation
1. Wash the cherries, remove the pits and let them drain in a sieve. 2. Mix the softened butter, at room temperature, with the sugar until creamy. 3. Add the eggs, one at a time, and mix well after each. Add the crumbled urdă and mix until the mixture is smooth. 4. In a separate bowl, mix 125 g flour with the baking powder and salt. 5. Add half of the dry mixture to the egg and urdă mixture and mix lightly. Add the vanilla extract, sour cream and 100 ml yogurt, then mix again. 6. Add the remaining 125 g flour and the remaining 100 ml yogurt and mix lightly, just until fully combined. 7. Roll the cherries in the 2 tablespoons semolina. Pour half of the batter into a 24/24 cm or 20/30 cm pan lined with baking paper and place half of the rolled cherries on top. Pour the rest of the batter over, place the remaining cherries and press them gently into the batter, then cover them with batter using a spoon or spatula. 8. Preheat the oven to 180 degrees C (medium heat), put the pan in and bake for 45-50 minutes, until a toothpick comes out clean. 9. Take the cake out of the oven, let it cool in the pan and then serve it.
Notes
The cake keeps for up to 3 days in the fridge, covered. The cherries can be swapped for blackberries, strawberries or sour cherries, as I tried myself, and it comes out just as good. Contains gluten, eggs and dairy. It is served with a cup of tea or coffee, at lunch or in the afternoon. The urdă needs to be dry and crumbled, and if it is watery, drain it in a colander first. The 24/24 cm or 20/30 cm pan changes the time a little, so check with a toothpick. If after 45 minutes it is still soft in the middle, leave it in the oven for a few more minutes.
Frequently asked questions
Can I use cottage cheese instead of urdă?
Yes, 500 g well-drained cottage cheese, but the batter comes out denser and less fluffy.
What if the cherries are frozen?
Thawed and well drained on kitchen paper, the same 300 g are used, so that no water gets into the batter.
How fat should the sour cream be?
At least 20% fat, 200 ml, taken out of the fridge 15 minutes before it goes into the batter.
