Tiramisu Cake with Green Sugar - A Holiday Delight
Preparation time: 30 minutes
Cooling time: 8 hours (or overnight)
Servings: 12
Tiramisu dessert is undoubtedly one of the most beloved treats in the world. With a fascinating history, this cake combines rich coffee flavors, smooth mascarpone cream, and fluffy biscuits, all in a perfect combination that delights the taste buds. In this recipe, I chose to pay tribute to the anniversary of my friends at Green Sugar by integrating a special ingredient that makes this Tiramisu not only delicious but also healthier.
Ingredients:
For Tiramisu:
- 300 ml quality espresso coffee, sweetened with 2 packets of Green Sugar
- 1 large package of ladyfingers
- 3 egg yolks
- 3 tablespoons raw sugar (optional)
- 200 ml heavy cream
- 250 g mascarpone
- 8 packets of Green Sugar
- 1 tablespoon gelatin granules
- 3-4 tablespoons cold water
- 2-3 tablespoons Amaretto liqueur (or almond essence)
For decoration:
- 80 ml heavy cream
- 2-3 tablespoons thick cream
- 1 teaspoon vanilla essence
- 4 packets of Green Sugar
- 1 teaspoon instant coffee + 3-4 tablespoons water
- 1-2 tablespoons hot chocolate with Green Sugar
- White candies for decoration
Step by Step:
Step 1: Prepare the coffee
Start by making 300 ml of espresso coffee. It is important that it is of good quality, as the coffee's aroma will influence the entire recipe. Sweeten the coffee with 2 packets of Green Sugar and let it cool.
Step 2: Prepare the mold
Take a heart-shaped silicone mold and line it with plastic wrap. Make sure the edges of the wrap hang over so you can cover the cake at the end.
Step 3: Prepare the cream
In a bowl, whisk the egg yolks with the raw sugar (if you choose to use it) with a whisk. When the mixture becomes lighter in color, transfer it to a double boiler. Whisk constantly for 18-20 minutes or until the sugar is completely dissolved and the mixture becomes creamy.
Helpful tips: Make sure not to boil the water in the pot, but just keep it at a constant temperature to avoid coagulating the yolks.
Step 4: Gelatin
Soak the gelatin in cold water. After it has hydrated, add it to the egg yolk mixture and whisk until completely dissolved.
Step 5: Mascarpone cream
In another bowl, whip the heavy cream with 8 packets of Green Sugar until you get a firm consistency. Gradually add the mascarpone and mix on low speed to incorporate the ingredients. Finally, add the Amaretto liqueur (or almond essence) and the egg yolk cream. Continue mixing on low speed until everything is well combined.
Step 6: Assemble the cake
Quickly dip the ladyfingers in the cooled espresso coffee (do not leave them too long, or they will fall apart) and arrange them in a single layer in the prepared mold. Add half of the mascarpone cream over the ladyfingers, smoothing it with a spatula. Refrigerate for 10-15 minutes, then repeat the process with another layer of ladyfingers and the remaining cream. Cover the cake with the edges of the wrap and let it refrigerate for a few hours (ideally overnight).
Step 7: Decoration
The next day, prepare the decoration cream. Whip the heavy cream with the thick cream, vanilla essence, and 4 packets of Green Sugar until you get a firm mixture. Add the dissolved instant coffee and gently mix to achieve a brownish hue.
Personal tip: Use hot chocolate with Green Sugar to decorate the cake, giving it a special taste and an interesting texture.
Step 8: Serving
Remove the cake from the refrigerator, remove the wrap, and decorate with the prepared whipped cream. Dust with hot chocolate and add white candies for a festive look. Cut into slices and serve with a cup of coffee or a glass of sweet wine for a complete culinary experience.
