Semolina dessert with blackberry jam and cocoa

Semolina dessert with blackberry jam and cocoa: semolina cooked in milk with vanilla, layered in glasses with the jam. The blackberry jam shows through the glass, and cocoa and a few chocolate cubes go on top. I usually serve it in bowls, but when I want something different I put it in glasses. Prep: 10 minutes. Cooking: 10 minutes. Total time: 20 minutes. Servings: 4. About 430 kcal and 14 g protein per serving.
Ingredients
- 1000 ml milk
- 150 g semolina
- 1 tablespoon vanilla extract
- 120 g blackberry jam
- 2 tablespoons cocoa powder
- 50 g chocolate (cubes)
Preparation
1. Put the milk on to heat over medium heat, together with the vanilla extract, about 5 minutes, until it starts to boil. 2. When the milk boils, add 130 g of semolina, sprinkling it in like rain, and stir constantly. 3. Lower the heat to minimum and stir for about 4 minutes, until you get a thick mixture. 4. If the semolina does not look thick enough, add some of the remaining 20 g, a little at a time, and stir for 1 more minute. 5. Pour the semolina into glasses or bowls. 6. Start with two spoons of semolina, then add two spoons of blackberry jam, another two spoons of semolina and one spoon of jam. 7. Sprinkle cocoa on top and add the chocolate cubes.
Notes
The semolina needs to go into the glasses while it is still hot, because it sets quickly as it cools. If you double the amount, use a wider pot, otherwise the milk catches on the bottom while you stir. The texture is like a sweet polenta, but the semolina can still be poured, so don't worry if it looks soft at first. Choose a jam that is not too runny, because a watery one mixes into the semolina and won't form layers. Add the cocoa and chocolate just before serving, because on top they get damp and stained. For a dairy-free version, replace the milk with oat milk, same amount, but remember that semolina contains gluten. Serve it warm, with a spoon, and cover the leftovers and keep them in the fridge for up to 3 days.
Frequently asked questions
What if the semolina forms lumps?
Take the pot off the heat and whisk for a few seconds. Any lumps that remain can be strained through a fine sieve before you pour into the glasses.
What can I use instead of cocoa?
Finely grated chocolate, about 20 g, sprinkled on the same way as the cocoa, gives a sweeter layer.
Can I use a different jam?
Yes, raspberry jam works in the same amounts. Apricot jam is thicker, so loosen it with a spoonful of warm water before you put it in the glass.
