I have made this Saxon cheesecake a few times, especially when I had guests or when I had fresh cheese left in the fridge. 800 ml milk
220 g semolina
3 tablespoons sugar
a pinch of salt
500 g cottage cheese
5 eggs
50 g flour
50 g butter (plus a little for greasing the tray)

Preparation method

1. Start with the semolina base. Put the milk in a pot, add a pinch of salt and the 3 tablespoons of sugar. Put it on the heat and let it simmer until it starts to boil.
2. When the milk is almost boiling, gradually sprinkle the semolina in and stir vigorously to avoid lumps. Stir until the semolina thickens, but do not cook it too long – just enough to blend well with the milk. Set aside to cool slightly.
3. Meanwhile, prepare the filling. In a bowl, combine the cottage cheese, the 5 eggs, flour, melted butter, grated lemon zest, and vanilla sugar. Add the sugar (as much as you find suitable; I use 3-4 tablespoons, but this varies depending on the cheese's taste). Mix everything until you have a homogeneous mixture.
4. Grease a tray (approximately 25x30 cm or thereabouts) well with butter. Pour the semolina mixture and spread it evenly on the bottom of the tray.

6. Pour the cheese mixture on top, spreading it evenly with a spatula or spoon.
7. Place the tray in the preheated oven at 180°C. Bake for 35-40 minutes, until the top of the cheesecake turns golden.
