Romanian diplomat cake with yogurt and strawberries, no-bake

Romanian diplomat cake with yogurt and strawberries, no oven: ladyfingers, Greek yogurt, whipped cream and gelatin, which cuts neatly after 6 hours in the fridge. The cream has a tangy yogurt taste, with strawberry puree in it, and the ladyfingers soften and bind to it in the fridge. I always keep the foil laid in the tin, so I can take it out whole. Preparation: 20 minutes. Cooking: 4 minutes. Resting: 375 minutes. Total time: 399 minutes. Servings: 8. About 385 kcal and 9 g protein per serving.
Ingredients
- 500 ml water
- 3 sachets gelatin (10 g each)
- 500 g Greek yogurt with 10% fat
- 250 g icing sugar
- 250 g strawberries
- 200 ml whipped cream
- 1 sachet vanilla sugar
- 10 ladyfingers
For decoration
- 50 g dark chocolate
- 6 strawberries
Preparation
1. Blend the strawberries until they become a puree. 2. Pour the gelatin (all 3 sachets) into a pan with 500 ml water, stir and leave for 15 minutes, as the package says. 3. After 15 minutes, put the pan on low heat and warm until it melts and becomes completely clear, 2-3 minutes. Take it off the heat. 4. Blend the yogurt for a few seconds with the icing sugar and vanilla sugar, then add the strawberry puree. 5. Add the 200 ml whipped cream and stir gently, then pour in the gelatin too. The mixture will be very runny, but it sets in the fridge. 6. Line a cake tin with cling film, pour in all the mixture, then add the ladyfingers. 7. Put it in the fridge for 6 hours or overnight, until it sets well. 8. Melt the dark chocolate in the microwave, 1 minute. Put it in a piping bag, cut the corner and pipe it over the cake. 9. Decorate with a few strawberries.
Notes
If the yogurt turns out too sour, add icing sugar to taste. The gelatin must be completely clear before you pour it in, otherwise there will be lumps. The gelatin is the step people rush, but the 15 minutes are worth it, and melt it slowly. Keep it covered in the fridge for up to 3 days, and if it is for dinner, make it in the morning. Serve cold, with a coffee or a tea. Raspberries instead of strawberries work too, in the same amount. The cake contains gluten, milk and eggs.
Frequently asked questions
Can I use plain yogurt instead of Greek yogurt?
Yes, plain yogurt with 10% fat works in the same amount, but the cream comes out softer, so don't take it out of the fridge before the 6 hours.
What if it doesn't set?
Check that you melted the gelatin completely in the 500 ml water, with all 3 sachets of 10 g, otherwise the cream won't set.
What can I replace the ladyfingers with?
You can try plain dry biscuits with a neutral taste, 10 pieces, but they soften differently, so watch how the cream sets.
Can I melt the chocolate over a water bath?
Yes, 50 g dark chocolate melts over a bowl of warm water in 2-3 minutes, stirring until smooth.
