Preparation time: 60 minutes
Baking time: 30 minutes
Total time: 90 minutes
Number of servings: 12-15 rolls

Ingredients

For the puff pastry:
- 3 eggs
- 1 package (250 g) butter
- 9 tablespoons of oil
- 11 tablespoons of water
- 1 tablespoon of sugar
- A pinch of salt
- Vanilla essence (optional)
- 1 packet of baking powder
- 1 teaspoon of baking soda
- Flour (about 500 g, enough to obtain a good rolling dough)

For the filling:
# White cream (vanilla):
- 500 ml milk
- 3 tablespoons of sugar
- 1 packet of vanilla pudding
- 1 tablespoon of flour
- A pinch of salt
- ½ package of butter
- Vanilla essence

# Black cream (chocolate):
- 500 ml milk
- 1 packet of chocolate pudding
- 1 tablespoon of flour
- 3 tablespoons of sugar
- A pinch of salt
- ½ package of butter
- Rum essence

Instructions

Step 1: Preparing the puff pastry dough
1. Start by melting the butter in a saucepan over low heat. Once melted, take 9 tablespoons of it and set aside.
2. In the saucepan with melted butter, add 9 tablespoons of oil and a handful of flour. Mix well over the heat, ensuring there are no lumps. Once the mixture is homogeneous, remove the saucepan from the heat and let it cool slightly.
3. In the bowl with the reserved 9 tablespoons of butter, add the 3 eggs, sugar, a pinch of salt, and vanilla essence. Mix everything well with a mixer until it becomes a smooth cream.
4. Add 11 tablespoons of water and the flour mixed with baking powder and baking soda. Start kneading the dough, adding flour gradually until you obtain an elastic and homogeneous dough. You may need to use about 500 g of flour.

Step 2: Forming the puff pastry
1. On a floured work surface, roll out the dough as thin as possible.
2. Divide the dough in half. Spread the first half with half of the butter mixture you prepared earlier (it can be slightly warm but not hot).
3. Carefully roll the other half of the dough over the buttered one. Continue alternating between the buttered and unbuttered sections until you finish all the dough. Now, refrigerate the dough for a few hours, ideally overnight, to firm up.

Step 3: Preparing the creams
1. White cream: In a saucepan, mix the flour, pudding, sugar, salt, and vanilla essence with a little cold milk. Add the rest of the warm milk and bring to a boil over medium heat, stirring constantly. When the cream has thickened and started to boil, remove from heat and add the butter, stirring until it melts and incorporates.
2. Black cream: Follow the same procedure as for the white cream, but use chocolate pudding and rum essence.

Step 4: Forming the rolls
1. Once the dough has firmed up, take it out of the refrigerator and roll it out again on the work surface. Cut it into strips about 2 cm wide.
2. Wrap each strip around the roll molds, being careful not to overfill them.
3. Place the rolls on a baking tray lined with parchment paper and bake in a preheated oven at 180 degrees Celsius for 25-30 minutes, or until golden and crispy.

Step 5: Filling the rolls
1. When the rolls are baked, remove them from the oven and let them cool slightly before taking them off the molds.
2. Fill each roll with vanilla cream and chocolate cream, using a piping bag or pastry syringe to ensure they are well filled.
3. Finally, dust the rolls with powdered sugar for an elegant look and added sweetness.

Serving and combinations
These puff pastry rolls filled with pudding are perfect for serving as dessert at a party or as a sweet snack with coffee. You can pair them with a caramel or chocolate sauce for an extra flavor boost. Additionally, a scoop of vanilla or chocolate ice cream would perfectly complement this dessert.

Useful tips
- Make sure to use quality butter to achieve a fluffy and tasty puff pastry.
- If you want a healthier version, you can replace some of the sugar with natural sweeteners.
- The rolls are best consumed fresh, but can be stored in the refrigerator for 1-2 days. Fill them with cream only before serving to prevent them from getting soggy.

Nutritional information
Each roll contains approximately 150-200 calories, depending on the portion of cream filling. They are a good source of energy due to the carbohydrates in the flour, but also contain fats from the butter, so it's best to consume them in moderation.

Now that you have all the necessary information, all that's left is to get cooking! Enjoy the preparation process and the final result, which is sure to impress everyone. Enjoy your meal!
