- Total time: 2 hours and 55 minutes
- Number of servings: 12

Ingredients
For the base:
- 6 eggs
- 180 g sugar
- 180 g flour
- 2 tablespoons cocoa
- A pinch of salt

For the cream:
- 1 can of peach compote (approx. 400 g)
- 800 ml peach yogurt
- 3 tablespoons sugar (optional, depending on preferences)
- 300 ml liquid cream
- 1 packet of fine gelatin
- 1 packet of vanilla sugar

For the syrup:
- Juice from the peach compote
- 3 tablespoons rum
- 1 packet of vanilla sugar

For decoration:
- 200 ml cream
- 2 peaches, sliced
- Juice from one orange
- 3 tablespoons peach compote juice
- 1 teaspoon gelatin
- Physalis fruits (optional)

Preparation

Step 1: Preparing the base
1. Separating the eggs: Start by separating the egg whites from the yolks. It is essential to have a clean bowl for the egg whites to beat them well.
2. Beating the eggs: In a large bowl, add the egg whites, sugar, and salt. Mix on high speed for about 20 minutes until the mixture becomes frothy and triples in volume.
3. Incorporating dry ingredients: Sift the flour and cocoa together, then carefully add this mixture to the egg composition using a spatula or whisk to keep the air in the egg whites.
4. Baking: Pour the mixture into a 24 cm diameter cake pan lined with butter and flour. Bake in a preheated oven at 170°C for 25 minutes. When done, remove it and let it cool completely on a rack.

Step 2: Preparing the cream
1. Preparing the peaches: Drain the peaches from the compote and cut them into small pieces. Keep two halves for decoration.
2. Gelatin: Hydrate the gelatin according to the instructions on the package, then melt it in a double boiler.
3. Mixing ingredients: In a bowl, mix the peach yogurt and melted gelatin. If you prefer a sweeter taste, you can add the 3 tablespoons of sugar.
4. Whipping the cream: Whip the liquid cream until firm, then gently fold it into the yogurt mixture along with the peach pieces.

Step 3: Assembling the cake
1. Soaking the layers: In a small bowl, combine the compote juice with the rum and vanilla sugar. Use a brush or spoon to generously soak each layer of the base.
2. Assembling the cake: Place the first layer of the base on a serving platter, add part of the peach cream, then place the second layer of the base. Continue with another layer of cream and finish with the last layer of base. Cover the cake with the remaining cream.
3. Cooling: Cover the cake with plastic wrap and let it chill in the fridge for 2 hours, allowing the flavors to blend perfectly.

Step 4: Decorating
1. Whipping the cream for decoration: Whip the cream for decoration until firm and use it to decorate the cake. You can create shapes or simply spread the cream over the entire surface of the cake.
2. Decorating with peaches: Arrange the peach slices on top of the cake, and if you wish, you can also add physalis fruits for an elegant touch.

Serving
The peach cake is best served well chilled, ideally alongside a glass of peach champagne or a cold fruit tea. It is an excellent choice for dessert at parties or gatherings with family and friends.

Tips and Tricks
- Gelatin: Ensure that the gelatin is well-hydrated and melted to avoid lumps in the cream.
- Sweetening the cream: Taste the cream before adding sugar. The peach yogurt may be sweet enough on its own.
- Variations: You can experiment with other seasonal fruits or even use yogurt with other flavors, such as vanilla or coconut, to add a personal touch to your cake.
