Marble cake with whipped egg whites

Marble cake with whipped egg whites and hot syrup comes out light and fluffy, with brown streaks from the cocoa. Half of the batter is mixed with the two tablespoons of cocoa, and the white and brown layers go into the pan one after the other. I watch the egg whites most closely, because how fluffy the cake turns out depends on them. Preparation: 20 minutes. Cooking: 45 minutes. Resting: 10 minutes. Total time: 75 minutes. Servings: 12. Ingredients
- 8 eggs
- 270 g sugar
- 8 tablespoons water
- 1/4 teaspoon salt
- 300 g flour
- 1/2 packet baking powder
- 8 tablespoons oil
- 2 tablespoons cocoa
- 1 teaspoon vanilla extract
Preparation
1. Put the sugar with the 8 tablespoons of water on the heat and let it boil until you get a syrup, about 5 minutes. 2. Separate the whites from the yolks. Beat the whites into a foam with 1/4 teaspoon salt. 3. Add the hot syrup to the whipped whites gradually, beating constantly. 4. Mix the yolks with the oil, then add them over the whites. 5. Add the flour mixed with the baking powder and, at the end, the vanilla extract. Mix gently. 6. Divide the batter in two. Mix the 2 tablespoons of cocoa into one half. 7. Heat the oven to 180°C. Line the pans with baking paper. Put a layer of the white batter in each pan, then a layer of the brown one, and so on until both batters are used up. 8. Put the pans in the hot oven for 35-40 minutes, until a toothpick comes out dry. 9. Take the pans out of the oven and leave the cakes in the pan for 10 minutes.
