Cheese and Caraway Figurines

When I have guests that I want to surprise with something to nibble on or when I have leftover cheese in the fridge, I make these figurines. The actual preparation doesn’t take long, although it’s worth noting that the dough needs to chill in the fridge for a few hours. Ingredients

1 kg flour
2 teaspoons salt
2 teaspoons sugar
2 tablespoons lard
130 g margarine
300 ml sour cream (20% fat)
1 egg (for the dough)
1 cube fresh yeast
100 ml lukewarm milk
200 g cheese (for the dough, finely grated)
+ additional cheese for sprinkling on top
1 egg (for brushing)
caraway seeds, for sprinkling

Preparation method

1. Prepare the yeast: place the yeast cube in a cup, add 100 ml of lukewarm milk, and mix until completely dissolved.

2. In a large bowl, combine the flour, salt, sugar, lard, margarine, sour cream, and the egg. Add the dissolved yeast in milk.

3. Grate 200 g of cheese on a fine grater and add it to the bowl.

4. Knead everything well until you obtain a homogeneous dough. There’s no need to overdo it, just enough to mix everything well.

5. Wrap the dough in plastic wrap and let it chill in the fridge for about 3 hours. It can stay longer if needed.

6. After chilling, take the dough out and portion it into pieces for easier rolling.

7. Roll each piece into a sheet about 2 cm thick. Cut with special shapes or a knife, as preferred.

8. Place the cut pieces on a baking tray lined with parchment paper.

9. Brush each figurine with beaten egg using a brush.

10. Sprinkle grated cheese and caraway seeds to taste on top of each figurine.

11. Bake in a preheated oven at medium temperature for 15-20 minutes. Look for a golden color and a browned appearance.

They can be made in advance and last a few days. They have a hearty flavor and are more filling than many store-bought snacks. I also find it a good way to use up leftover cheese. The dough is easy to work with, and kids enjoy cutting shapes. They are great for platters or lunch boxes.
