Eclairs
Delicious Eclairs – A classic recipe that blends tradition with flavor!
When it comes to desserts, eclairs hold a special place in the hearts of many of us. These crispy delights, filled with a smooth cream and topped with a chocolate glaze, are not only a treat for the taste buds but also a visual pleasure. Today, I will share my recipe for eclairs, perfect for any occasion, whether it's an anniversary, a celebration, or simply a moment of indulgence.
Preparation time: 30 minutes
Baking time: 30-40 minutes
Total time: 1 hour
Servings: 12 eclairs
Ingredients for eclairs (dough):
- 1 cup oil (approximately 250 ml)
- 2 cups water (approximately 500 ml)
- 2 cups flour (approximately 250 g)
- 6 large eggs
Ingredients for cream:
- 700 ml milk
- 200 g sugar
- 5 tablespoons cornstarch (approximately 40 g)
- ½ pack of butter (approximately 125 g)
- 5 eggs
- Vanilla and lemon zest (to taste)
Ingredients for glaze:
- 10 tablespoons sugar
- 2 tablespoons cocoa
- 3 tablespoons water
- ¼ pack of butter (approximately 62 g)
Preparation:
1. Preparing the eclair dough:
Start by bringing a large pot of water and oil to a boil. It is essential that these ingredients boil well before adding the flour. Wait until the water and oil reach a boiling point.
2. Adding the flour:
Once the mixture has begun to boil, remove the pot from heat and add all the flour at once. Use a spatula or a wooden spoon to mix quickly, ensuring there are no lumps. The dough should become smooth and pull away from the sides of the pot.
3. Incorporating the eggs:
Let the dough cool for a few minutes, then add the eggs one at a time. It is important to mix well after each egg so that it is fully incorporated before adding the next. Continue until all 6 eggs are incorporated.
4. Shaping the eclairs:
Preheat the oven to 200°C. Line a baking tray with parchment paper. Use a pastry bag or a plastic bag with a corner cut off to shape the eclairs on the tray. You can make them to the desired size, but be sure to leave enough space between them, as the dough will rise in the oven.
5. Baking:
Place the tray in the preheated oven and bake the eclairs for 30-40 minutes or until they are golden and crispy. Avoid opening the oven door during baking, as this can cause the eclairs to deflate.
6. Preparing the cream:
In a saucepan, mix the sugar with cornstarch, eggs, and milk. Cook over medium heat, stirring constantly, until the mixture thickens. Once the cream reaches the desired consistency, add the butter and flavors (vanilla and lemon zest), mixing well to combine everything.
7. Filling the eclairs:
After the eclairs have completely cooled, slice them lengthwise with a sharp knife. Use a teaspoon to fill each half with the prepared cream. Be generous, but do not overfill to avoid spilling the cream.
8. Preparing the glaze:
In a small saucepan, combine sugar, cocoa, and water. Cook the mixture over low heat, stirring constantly, until the sugar completely dissolves and the glaze becomes smooth. Finally, add the butter and mix well.
9. Decorating the eclairs:
Once the glaze is ready, pour it over the filled eclairs. You can use a spatula to spread the glaze evenly or let it flow naturally. Allow the glaze to set slightly before serving.
My personal tip:
If you want to add extra flavor, you can experiment with the cream flavors. Add a few drops of almond extract or a little rum for an exotic touch. You can also use melted white chocolate instead of cocoa glaze for a lighter and sweeter option.
Nutritional benefits:
Eclairs, although considered an indulgent dessert, can be enjoyed in moderation. The flour and eggs provide protein and carbohydrates, while the butter adds healthy fats, but it is important to be mindful of portions. A serving of eclairs can contain about 250-300 calories, depending on size and ingredients used.
Frequently asked questions:
1. Why don’t eclairs rise?
It is important to strictly follow the recipe steps and not open the oven during baking. Also, ensure that the dough is well mixed and that the eclairs have enough space on the tray.
2. Can I freeze eclairs?
Yes, eclairs can be frozen, but it is recommended to keep them unfilled. Fill them with cream only before serving to maintain the crispy texture.
3. What can I serve eclairs with?
Eclairs can be served alongside a flavorful coffee or tea. Additionally, a berry sauce or vanilla ice cream can perfectly complement this dessert.
Eclairs are more than just a simple dessert; they are a culinary experience that brings joy in every bite. So, showcase your cooking skills and treat your family and friends to these delicious delights! Enjoy!
