Diet Yogurt Cake: A Light and Healthy Delight

Do you want a quick and delicious dessert that won't affect your diet? This diet yogurt cake is the perfect choice! Easy to prepare, with simple and healthy ingredients, this dessert is sure to become one of your favorites. Plus, you can experiment with different fruits to give it a personal touch!

Ingredients for the base:
- 2 large eggs
- 4 tablespoons of flour (I recommend using whole wheat flour for added fiber)
- 2 tablespoons of sugar (you can replace it with a natural sweetener like honey or agave syrup for an even healthier option)
- 4 tablespoons of water
- 1 teaspoon of baking powder
- Vanilla essence (about half a teaspoon)

Ingredients for the yogurt cream:
- 1 large fruit yogurt (strawberry or any other preferred flavor)
- 1 packet of gelatin
- 1 tablespoon of granulated sugar (adjust to taste)

Ingredients for decoration:
- Kiwi, tangerines, bananas (or your favorite fruits)
- 1 packet of jelly (from Dr. Oetker or another brand)

Preparation method:

1. Preparing the base: Start by separating the egg whites from the yolks. In a large bowl, beat the egg whites with a pinch of salt until foamy. Gradually add the sugar and continue mixing until you achieve a firm and glossy foam.

2. Add the yolks, water, flour, baking powder, and vanilla essence. Gently fold in with a spatula, from the outside in, to avoid losing air in the mixture.

3. Baking the base: Line a not-too-large baking tray (about half the size of a standard oven tray) with parchment paper. Pour the mixture into the tray and level it with a spatula. Place the tray in the preheated oven at 180°C for 15-20 minutes. The cake is ready when a toothpick test comes out clean.

4. Preparing the cream: Once the base has completely cooled, prepare the cream. Mix the yogurt with the sugar until smooth. Prepare the gelatin according to the package instructions. Once it has cooled slightly, pour the gelatin in a thin stream over the yogurt, stirring constantly. Leave the cream in the fridge for 5 minutes, but no longer, to avoid it hardening too much.

5. Assembling the cake: Spread the yogurt cream evenly over the cooled base. Arrange the sliced fruits (kiwi, tangerines, bananas) on top for a colorful and appetizing look. Prepare the jelly according to the package instructions and pour it over the cake.

6. Cooling: Place the cake in the fridge for 1-2 hours, so the jelly sets well.

Serving:
Cut the cake into squares and serve it as a refreshing dessert after dinner or as a healthy snack throughout the day. This diet yogurt cake is perfect to be enjoyed alongside a cup of green tea or coffee!
