Cream Puff Cake
Vanilla and Fresh Fruit Cremsnit Cake
Today is a special day for me, and to celebrate it properly, I decided to make a delicious cake filled with the flavors of vanilla and fresh fruits. Although my children love chocolate, I prefer a dessert that is less sweet but equally delightful. This Cremsnit Cake is the perfect combination of textures and tastes, featuring a light choux pastry base, a smooth cream, and fresh fruits that add a touch of freshness. Let's get started!

Ingredient details
- Puff pastry: Choose a quality brand for a perfect texture. This will form the base of the cake and add a crunchy contrast.
- Cremsnit Cream: This brings a creamy and delicate taste, perfect for balancing the sweetness of the fruits.
- Choux: This pastry is light and airy, ideal for filling with cream. Make sure the eggs are at room temperature for proper incorporation.
- Fruits: Choose fresh seasonal fruits to add a splash of color and freshness to the cake. Kiwi and oranges are excellent options due to their acidity.
Preparing the Cremsnit Cake
Step 1: Preparing the choux
1. In a saucepan, bring the butter and water to a boil. When the mixture starts to boil and the butter has completely melted, add the flour all at once.
2. Mix vigorously with a spatula over medium heat until the dough pulls away from the sides of the saucepan and becomes smooth. This will take about 2-3 minutes.
3. Turn off the heat and let the dough cool slightly. Then, add the eggs one at a time, mixing well after each addition until the dough becomes smooth and shiny.
4. Preheat the oven to 200°C. Place the dough in a pastry bag or a zip bag and form small mounds on a baking sheet lined with parchment paper.
5. Bake the choux for 15 minutes at 200°C, then reduce the temperature to 180°C and bake for another 20-25 minutes. Let them cool completely.
Step 2: Preparing the cream for choux
1. In a saucepan, add 500 ml of milk, sugar, and flour. Mix well to avoid lumps.
2. Place the saucepan over low heat and stir constantly until the mixture thickens. Once it reaches the desired consistency, transfer the cream to a bowl and let it cool.
3. When the cream is cold, add the diced butter and mix with a mixer until fluffy. Then, gently fold in the whipped cream.
Step 3: Preparing the puff pastry layer
1. Thaw the puff pastry according to the instructions on the packaging. Roll it out slightly and cut out two circles with a diameter of 25 cm using a plate.
2. Bake the layers on the back of a cake pan lined with parchment paper at 180°C for about 15-20 minutes until golden and crispy.
Step 4: Assembling the cake
1. On a serving platter, place the first puff pastry layer. Add a generous layer of Cremsnit cream, smoothing it out well.
2. Place the second puff pastry layer on top and spread the choux cream around the edges and on top of the cake.
3. Decorate the cake with choux, arranging them nicely around the edge. In the center, add slices of kiwi and orange for a vibrant look.
4. Dust with powdered sugar, and if desired, you can add gelatin over the fruits for a shinier appearance and firmer texture.
My personal tip
If you want to add a hint of flavor, try infusing the milk with a bit of vanilla or lemon zest before using it. This will enrich the cream and provide a more complex taste.
