- 3 egg yolks
- 6 egg whites
- 1 teaspoon vanilla extract or 1 packet of vanilla sugar
- 1 tablespoon rum (optional, for a deeper flavor)
Step 1: Preparing the cherries
Wash the cherries well under cold water, ensuring no impurities remain. Remove the stems and pits using a knife or a cherry pitter. After cleaning the cherries, place them in a bowl and add the red wine mixed with 50 g of the powdered sugar. Let them macerate for 1 hour to allow the flavors to blend. This step will not only enhance the taste of the cherries but also add an elegant touch to the dessert.
Step 2: Preparing the mixture
After the cherries have macerated, drain them in a strainer and let them cool. In a large bowl, cream the butter with the remaining powdered sugar (150 g) until you achieve a fine foam. Add the vanilla extract and rum, mixing well. Gradually incorporate the egg yolks, one at a time, mixing vigorously after each addition. This mixture will provide the soufflé with a rich and flavorful base.
Step 3: Combining the ingredients
Add the drained cherries to the butter and yolk mixture, gently mixing to avoid crushing the fruit. In another bowl, beat the egg whites until stiff peaks form. To achieve an airy soufflé, it is essential not to incorporate the egg whites too vigorously; use a spatula and fold gently from the bottom up to retain the air in the mixture.
Step 4: Baking the soufflé
