Ingredients

For the base:
- 8 eggs
- 8 tablespoons of flour
- 8 tablespoons of sugar
- 1 packet of vanilla sugar
- 1 teaspoon of grated orange peel
- A pinch of salt

For the cream:
- 450 g of frozen berries
- 150 g of sugar
- 15 g of gelatin
- 500 ml of liquid cream
- 100 g of dark chocolate
- 150 ml of berry juice
- Juice from a can of pineapple or apricot compote
- 1 packet of cream stabilizer

Preparation

1. Preparing the fruits: Start by placing the frozen berries in a strainer and let them drain until completely thawed. This step is essential to avoid a soggy cake. Once thawed, you can lightly crush them in a blender along with 150 g of sugar. This mixture will form the flavorful base of the cream.

2. Dissolving the gelatin: In a small bowl, dissolve the gelatin in a little warm water, according to the instructions on the package. This will help stabilize the cream, ensuring your cake retains its shape.

3. Preparing the base: Preheat the oven to 150 degrees Celsius. In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add one tablespoon of sugar at a time, continuing to beat until the sugar is completely dissolved. Incorporate the egg yolks one by one, mixing well after each addition. Gradually add the flour, mixing with a wooden spoon from the bottom up to achieve a fluffy base.

4. Baking the base: Line a cake pan with parchment paper and pour in the batter. Bake for 35 minutes or until the base is golden and passes the toothpick test.

5. Preparing the cream: In another bowl, whip the liquid cream until firm. Meanwhile, add the dissolved gelatin to the berry mixture, mixing well. Gently heat 100 ml of berry juice and melt the dark chocolate in it. Add this mixture to the fruit cream and mix well. Finally, fold in the whipped cream, being careful not to lose air.

6. Assembling the cake: Cut the cooled base in half horizontally. Place the first half on the serving platter, pour half of the berry cream, then add the other half of the base and the remaining cream. Refrigerate the cake for at least 2 hours to set.

7. Serving: Before serving, you can add a drizzle of melted chocolate on top or decorate with fresh fruits for an attractive look. A dollop of whipped cream on top will turn this cake into a true visual feast.

Useful tips:
- Use fresh eggs for a fluffier base.
- Gelatin can be replaced with agar-agar for a vegan option.
- Vary the berries by using strawberries or raspberries, depending on your preferences.
- This cake is ideal for birthdays and parties, being a quick and simple dessert to make.

Enjoy this berry cake and let yourself be inspired by its delicious flavors!
