To prepare this delicious coconut roll, we will start by focusing on the cream. The first essential step is to cream the butter at room temperature until it becomes a fine and airy foam. We gradually add powdered sugar, continuously mixing to ensure it integrates perfectly. Once we have achieved a creamy texture, it's time to add the coconut. I chose to use yellow coconut, which provides an attractive appearance and a distinct flavor. After the mixture becomes homogeneous, we will cover it with plastic wrap and let it chill in the fridge to firm up a bit.
In the meantime, we will take care of the cookie mixture. In a large bowl, we will add the crushed cookies, sugar, and cocoa. We mix these dry ingredients well to ensure the flavors combine. Then, we will add hot milk, continuously stirring to obtain a homogeneous mixture. It is important to work quickly, as the mixture needs to still be warm to spread easily.
On a sheet of wafer, we spread half of the cookie mixture, ensuring we have an even layer so that the roll is well-formed. On top, we add half of the coconut cream, spreading it with a spatula to completely cover the cookies. Carefully, we roll the wafer sheet, being careful not to tear the layer. We repeat the same process with the second sheet of wafer, using the remaining cookie mixture and coconut cream.
After we have made the two rolls, we take care of the glaze. This is prepared in a double boiler; we melt the chocolate, mixing with a little butter until we obtain a glossy mixture. We pour the glaze over the already formed rolls, making sure to cover them evenly. After the glaze has cooled slightly, we place the rolls in the fridge to harden completely.
For a creative finish, the rolls can be decorated as desired: coconut flakes, grated chocolate, or even candied fruits can add extra flavor and an attractive appearance. This recipe is perfect for serving on special occasions or simply to indulge yourself on an ordinary day.
