Now I present to you my recipe for vegetarian crowns with apple and nuts, a vegetarian and fasting delicacy that can compete with any traditional cake. This recipe was thought out with the help of my godparents, and I am eager to share every detail for making a delicious dessert.

We start with preparing the starter. In a smaller glass bowl, we mix a teaspoon of sugar with 50 grams of fresh yeast. We add two heaping tablespoons of flour and 40 grams of lukewarm milk. We let the starter rise until it doubles in volume, which takes between 15 and 30 minutes, depending on the room temperature.

Meanwhile, we take care of the millet. In a pot, we put the millet and water, boiling on low heat and stirring constantly until all the water has evaporated. After this, we set the pot aside to cool slightly. Once the millet has cooled, we transfer it to a blender along with 400 grams of soy milk and the seeds from the vanilla pod, blending until we obtain a smooth mixture.

In the mixing bowl, we add the following ingredients: flour, sugar, 400 ml of soy milk, oil, two tablespoons of grated lemon peel, the millet mixture with milk and vanilla, as well as the starter. We let the mixer knead the dough for 10 minutes. We gradually add the remaining milk, and after we finish kneading, we let the dough rise until it doubles in volume, which takes about an hour.

After the dough has risen, we place it on a floured wooden board and stretch it by hand until it takes a rectangular shape. We cut the dough into thin strips, about 4 cm wide and 10 cm long. On each strip, we sprinkle ground nuts, seal the edges, and roll each strip until we obtain a thicker cord. We bend the dough cord and wrap each part over the other, joining the ends to form a crown.

To add extra flavor, we cut the apples into thin slices, then each slice in half, forming fans from the apple slices. We place these apple slices in the middle of the formed crowns. From the ingredients used, we obtain 4 trays of crowns, so if you want a smaller quantity, reduce the ingredients proportionally.

After you have filled the crowns, let them rise for 20 minutes, then bake them in a preheated oven at 160 degrees for 30 minutes. In the meantime, we prepare the syrup and decoration. For the syrup, we put 300 ml of water, 150 g of sugar, two tablespoons of lemon essence, and a tablespoon of grated lemon peel in a pot. We boil over medium heat, stirring until the sugar completely dissolves.

For decoration, we mix 300 g of honey with the remaining ground nuts. After the crowns are baked, we let them cool for 10 minutes, then we drizzle them with the prepared syrup and brush them with the honey and nut mixture. These vegetarian crowns with apple and nuts are delicious and attractive, perfect for both festive meals and an everyday dessert. Enjoy your meal!
