Desert - Savarine by Pamela E. - Recipia
To prepare the delicious savarines, we start by gathering all the necessary ingredients. In a large bowl, we add the fresh eggs along with the sugar. We use a mixer to combine these ingredients, achieving a homogeneous and fluffy mixture. We continue by adding the oil and the salt, mixing well to ensure that all the ingredients are perfectly integrated.

Separately, in a container, we warm up some milk, making sure it is just lukewarm, not hot, so as not to destroy the yeast. We dissolve the yeast in the warm milk and mix until it is completely dissolved. We then pour the milk and yeast mixture into the bowl with the eggs and sugar. Everything needs to be well homogenized.

Now, the next step is to gradually add the flour, mixing with a spatula or with the mixer on low speed, until the dough becomes elastic and no longer sticks to the sides of the bowl. It is essential to let the dough rise in a warm place, covered with a clean towel, until it doubles in volume. This process can take between 30 and 60 minutes, depending on the ambient temperature.

After the dough has risen, we take it out of the bowl and divide it into portions that we place in the savarine molds. It is important to fill the molds only three-quarters full, as the dough will continue to rise. We let it rise again for about 15-20 minutes. Meanwhile, we preheat the oven to a medium temperature.

Once the savarines have risen again, we bake them for 30-35 minutes, until they acquire a brown color and a fluffy texture. During the baking, we prepare a syrup from water and sugar, which we let boil for 2-3 minutes. Once the syrup has boiled, we let it cool slightly and add the rum essence for extra flavor.

After baking, we take the savarines out of the molds and let them cool slightly. We cut a cap off the top, but not completely, so we can fill the interior. Each savarin is dipped in the cooled syrup, allowing it to soak well, and then we place them on a tray.

Finally, we whip the cream for the whipped cream using a mixer, achieving a firm and airy consistency. Using a piping bag, we fill each savarin with delicious whipped cream. As decoration, we can add strawberry jam or other fruits, as preferred, for an attractive appearance and a sweet-sour taste. Our savarines are now ready to be served and enjoyed by all loved ones!
