To prepare these delicious cheese balls, start by grating the cheese, choosing a fresh and flavorful cheese that will give a rich taste to the dish. You can opt for cottage cheese, telemea, or even feta cheese, depending on your preferences. Once you have finished grating, set the cheese aside in a large bowl.

In another container, beat the whole eggs with the sugar, mixing them well until you obtain a homogeneous composition. It is important for the sugar to dissolve completely to avoid unwanted granules in the dough. Then add the flour, semolina, and baking soda extinguished with a teaspoon of vinegar or lemon juice. This combination will help the dough rise and give it a fluffy texture. Mix the dry ingredients with the wet ones, then add the grated cheese. Knead with your hands until all the ingredients are well incorporated and the dough becomes homogeneous.

After obtaining a uniform dough, heat the oil in a deep pan. Make sure the oil is hot enough to fry the balls evenly and give them a golden and crispy crust. From the dough, form balls the size of a ping pong ball, then gently flatten them with your palm.
