Step 1: Preparing the Potatoes
Start by washing the potatoes well, then boil them in salted water. Cook for 20-25 minutes until soft. Check with a fork if they are done: they should be easily pierced. Once boiled, drain and let cool slightly, then peel them.
Step 2: Making the Dough
Place the boiled potatoes in a large bowl and mash them with a potato masher or fork until you have a smooth puree. Add the egg, salt, and flour, mixing everything well until you have a homogeneous dough. If the dough is too sticky, you can add a little more flour, but be careful not to overdo it, as you want your dumplings to remain fluffy.
Step 3: Filling with Plums
Cut the plums in half and remove the pits. If using dried plums, you can leave them whole or cut them into smaller pieces. In the center of each portion of dough, place half a plum and, if desired, sprinkle a little sugar for a sweeter taste. Form a ball around the plum, ensuring it is well sealed.
