Mud Cake or Cake with Lots of Chocolate
Preparation: We start by melting the chocolate over low heat together with the butter, water, and instant coffee, stirring constantly to avoid burning the ingredients. It is important to ensure that the chocolate is completely melted and homogenized, after which we turn off the heat and let the mixture cool slightly. In a separate bowl, we mix the eggs, buttermilk, oil, and vanilla sugar until we achieve a creamy and smooth consistency. This mixture will add moisture and a pleasant flavor to the cake.
In another bowl, we combine the dry ingredients: flour, cocoa powder, sugar, and baking powder. These ingredients are essential for giving structure and juiciness to the cake. Once the combination of dry ingredients is well homogenized, we add the flour mixture to the egg mixture. We carefully mix so that the ingredients combine perfectly without forming lumps. Then, we incorporate the warm chocolate, ensuring that everything is well homogenized and that no traces of chocolate remain.
We prepare a cake pan with a diameter of 26 cm, lining it with baking paper and grease, making sure the paper is higher than the edges of the pan, as the cake will rise considerably during baking. We preheat the oven to 160 degrees Celsius and transfer the mixture into the pan. We bake the cake for about an hour, but it is advisable to check the baking with a toothpick, as the baking time may vary depending on the oven. Sometimes, it may be necessary to leave the cake for even an hour and a half.
After the cake is baked, we let it cool completely. In the meantime, we prepare the glaze by melting the chocolate together with the liquid cream over a double boiler, stirring constantly. If the glaze is too thick, we can add a little liquid cream to achieve a more fluid consistency. Once the cake has cooled, we turn it upside down onto a plate to have a perfectly flat surface, and then we coat it with the chocolate glaze.
After the cake is completely glazed, we refrigerate it to let the glaze set. We can also prepare melted white chocolate with liquid cream for additional decoration. The cake can be decorated according to individual preferences, but it is just as delicious without decorations. This cake is truly delicious, and the wait to taste it was worth every moment!
Ingredients: 250g milk and dark chocolate, 250g butter, 2 teaspoons instant coffee, 190 ml water, 325 g flour, 35 g cocoa powder, 1 baking powder, 500 g sugar, 4 large eggs, 30 ml oil, 1 vanilla sugar, 125 ml buttermilk or half milk and half yogurt. Glaze: 300 g dark chocolate, 100 ml liquid cream. White chocolate for decoration optional.
