Ingredients for the cake base:

- 200 ml whipping cream

- 1 packet of gelatin (10 g)

For the flavored gelatin:
- 200 ml cherry juice (or your favorite fruit juice)
- 10 g powdered gelatin

Preparation of the cake base:
1. Start by preparing the cake base. Crush the biscuits in a food processor or place them in a bag and crush them with a rolling pin until they become a fine powder.
2. Melt the butter in a small saucepan and, after it cools slightly, mix it with the crushed biscuits until you obtain a homogeneous mixture.
3. Spread the biscuit mixture in a square baking dish (approximately 20x20 cm) lined with parchment paper, pressing well to form an even layer. Place in the refrigerator to harden while you prepare the cream cheese.

Preparation of the cream cheese:
4. In a large bowl, mix the cottage cheese with the powdered sugar and vanilla sugar until you obtain a smooth and homogeneous cream.
5. In another bowl, whip the cream until it becomes firm and gradually add it to the cheese mixture, mixing with a spatula to avoid losing air.
6. Hydrate the gelatin in 50 ml of cold water for 5 minutes, then gently heat it in a double boiler or microwave until completely melted. Add the melted gelatin to the cream cheese and mix well.

Preparation of the cherry filling:
7. In a saucepan, place the cherries with the sugar and let them simmer over low heat for 5-7 minutes until they soften slightly.
8. Hydrate the gelatin for the cherries as in the previous step and mix it with the warm cherries, stirring quickly to dissolve completely.

Assembling the cake:
9. Remove the base from the refrigerator and pour the cream cheese over it, leveling it evenly. Let it cool in the refrigerator for 30 minutes.
10. Add the cherry filling on top, distributing it evenly. Place it back in the refrigerator for at least 30 minutes to set.

Preparation of the flavored gelatin:
11. Prepare the flavored gelatin by mixing the cherry juice with the hydrated and melted gelatin, then pour it over the cherry filling. Leave the cake in the refrigerator for another 2-3 hours or until it sets completely.
