Lenten Pancakes
To prepare delicious pancakes, start by selecting a large bowl in which you will mix the dry ingredients. Add 250 grams of wheat flour, a pinch of salt, 1 teaspoon of baking soda, and 2 tablespoons of sugar. These combine perfectly to create a balanced base that will give the pancakes a slightly fluffy texture and a sweet flavor that will delight your taste buds.
Once the dry ingredients are well mixed, start gradually adding 500 ml of water. It is important to add the water in small amounts and to mix constantly with a whisk to avoid lumps. Mix patiently until the mixture becomes homogeneous and fluid. Finally, integrate 6 tablespoons of vegetable oil into the batter, which will help keep the pancakes tender and prevent them from sticking to the pan.
Once the mixture is ready, take a non-stick skillet and grease it with a little oil, then place it on medium heat. When the skillet is hot enough, use a ladle to pour a suitable amount of batter into the pan. Spread the batter in circular motions so that the pancake forms evenly. Cook the pancake for a few minutes until the edges start to turn golden and slightly crispy. Check the pancake with a spatula, and when it is browned on one side, carefully flip it to cook the other side evenly.
After all the pancakes are cooked, stack them on a plate, covering them with a clean towel or lid to keep them warm and tender. Now comes the fun part: filling the pancakes! You can use your favorite jam or preserve – whether it's apricot, raspberry, or blackberry – the choice depends on your taste. Spread a generous spoonful of jam on each pancake, then roll or fold carefully.
The pancakes are served warm, and the flavors will blend perfectly, offering you an unforgettable culinary treat. Enjoy your meal!
