Preparation:

1. Preparing the dough: In a large bowl, combine the flour, sugar, baking powder, and salt. Mix the dry ingredients well with a fork to ensure the baking powder is evenly distributed. Add the butter cut into cubes and start kneading with your fingers until the mixture becomes sandy.

2. Adding the egg: Add the egg and continue kneading until the dough becomes homogeneous. If the dough is too crumbly, you can add a tablespoon of cold water to bind it better. Form a ball from the dough and wrap it in plastic wrap. Let it rest in the refrigerator for 15 minutes.

3. Preparing the pan: Preheat the oven to 180 degrees Celsius. Grease a tart pan with a little butter or use cooking spray to prevent sticking. You can use a pan with a diameter of 24 cm to achieve an ideal-sized tart.

4. Rolling out the dough: Remove the dough from the refrigerator and roll it out with a rolling pin on a floured surface until it reaches a thickness of about 5 mm. Place the dough in the prepared pan, cutting off the excess from the edges. Prick the bottom of the pan with a fork to prevent air bubbles from forming during baking.

5. Adding the jam: Evenly spread the chosen jam over the surface of the dough. You can use a spatula to distribute it evenly, making sure it reaches all corners.

I mixed 200 grams of wheat flour with 160 grams of sugar, a pinch of salt, and a teaspoon of baking powder. I combined 2 whole eggs and an egg yolk with the grated zest of a mandarin (you can use lemon or orange) plus 160 grams of butter at room temperature, so it's soft.
