This cake recipe is a true delight, easy to make, yet with a remarkable visual and taste impact. The base is soft and fluffy, while the cream cheese adds a creamy contrast, and the orange Fanta glaze perfectly completes this dessert, offering a note of freshness.

To start, we will prepare the base. First, we carefully separate the egg yolks from the egg whites, ensuring that no yolk remains in the whites, in order to achieve a perfect foam. In a bowl, we mix the yolks with the sugar until the mixture becomes creamy and light in color, about 1-2 minutes. Once we have a homogeneous texture, we add the oil in a thin stream, continuing to mix to integrate all the ingredients well.

Next, we sift the flour together with the cocoa powder and baking powder, making sure there are no lumps. We incorporate these dry ingredients into the wet yolk mixture, gently mixing to avoid losing air in the composition. In another bowl, we beat the egg whites with a pinch of salt until we achieve a firm consistency. Then, we carefully add them to the yolk mixture using a spatula and mixing with slow bottom-to-top movements to preserve the air in the egg whites.

The obtained composition is poured into a baking tray lined with parchment paper, measuring 25x35 cm. We place it in the preheated oven at medium heat and bake for about 25 minutes. It is important to do the toothpick test to ensure that the base is perfectly baked. After baking, we let the base cool completely.

For the cream cheese, we mix the soft butter with the powdered sugar until it becomes a fluffy foam. Then, we add the cottage cheese and vanilla essence, continuing to mix until we obtain a smooth cream. This is spread evenly over the cooled base, and the tray is placed in the refrigerator for about two hours to set.

As for the glaze, we prepare it according to the instructions on the pudding packet, making sure to replace the milk with the 800 ml of orange Fanta. When the glaze is slightly warm, we carefully pour it over the cream layer. After two hours of cooling in the refrigerator, the cake is ready to be sliced and enjoyed.
