Vanilla pudding is a classic dessert that brings back pleasant childhood memories. Preparing this delicious pudding is a simple process, but it requires attention to detail to achieve a smooth texture and an intense vanilla flavor. We start by gathering the necessary ingredients: 500 ml of fresh milk, 4-5 tablespoons of sugar, 1-2 sachets of vanilla sugar, 2 egg whites, and half a vanilla pod or a few drops of vanilla extract if you prefer.

The first step is to bring the milk to a boil in a medium-sized pot. Add the sugar and vanilla sugar, stirring constantly to ensure it dissolves completely. If you are using a vanilla pod, cut it lengthwise and add it to the milk. This will release its sublime flavors, enriching the taste of the pudding. Let the milk simmer on low heat, stirring occasionally to prevent it from sticking to the bottom of the pot. When the milk starts to boil, reduce the heat and let it simmer for 5-7 minutes.

After the milk has boiled, it’s time to let it cool down a bit. In the meantime, we take care of the egg whites. In a clean bowl, start beating them with a mixer on medium speed. Gradually add the 3 sachets of vanilla sugar, continuing to beat until you achieve a stiff and glossy foam. It is important for the egg whites to be at room temperature for proper beating. Once the milk has cooled slightly, we will carefully pour it into the bowl with the beaten egg whites, gently mixing to integrate all the ingredients.

After achieving a homogeneous mixture, transfer the mixture to a greased baking dish or mold. Bake the pudding in a preheated oven at 180 degrees Celsius for about 25-30 minutes or until the pudding rises and becomes golden on top. Once it is ready, remove the pudding from the oven and let it cool completely at room temperature.

For an extra flavor boost, you can add a berry sauce or a chocolate glaze on top before serving. Vanilla pudding is a versatile dessert that can be enjoyed plain or with various toppings, giving each serving a personal touch.
