Our simple cranberry muffin recipe is perfect for moments when you have unexpected guests or simply don't have time for complex preparations. Whenever you feel the need for a quick and delicious dessert, this recipe will save your day. We start by preparing the necessary ingredients: you will need fresh eggs, granulated sugar, soft butter, milk, flour, baking powder, fresh lemon zest, and vanilla sugar.

The first step is to take a large enough bowl to mix the ingredients. In it, add the eggs, granulated sugar, and soft butter. Use an electric mixer or a whisk to combine these ingredients until you obtain a fluffy and homogeneous cream. This will give the muffins a light and airy texture. Once you have the cream, start adding the milk gradually, mixing continuously. Alternatively, add the flour mixed with the baking powder, making sure there are no lumps in the mixture.

After incorporating the milk and flour, don't forget about the flavors that will make the muffins stand out. Add the grated lemon zest and vanilla sugar, mixing well to distribute the flavors evenly. Now, prepare the muffin tins, which you can grease with a little butter or line with baking paper. Fill each mold with batter halfway, then add a few cranberries to each. The cranberries will bring a tangy taste and a beautiful color to your muffins. After adding the cranberries, fill the molds with the remaining batter, filling them three-quarters full.

Preheat the oven to 180 degrees Celsius. Once the oven is ready, place the muffins inside and let them bake for 20-25 minutes. It is important not to open the oven door in the middle of baking, to avoid disturbing the rising process. Once the muffins have risen and turned golden, you can check if they are baked using the toothpick method: insert a toothpick into the center of one; if it comes out clean, the muffins are ready.

When they are done, take them out of the oven and let them cool slightly. Then, sprinkle powdered sugar on top for an attractive appearance and an extra touch of sweetness.
