To prepare a delicious cake with layers and coconut filling, we need to start with the necessary ingredients for the layers. In a large bowl, put 300 grams of flour, which will form the base of this dessert. Then, add 150 grams of lard, which we will rub with the flour until we obtain a homogeneous composition with a fine texture. This is the moment to add 2 egg yolks, which will bring extra flavor and a better consistency to the dough. Next, add 100 grams of sugar, which will sweeten the layers, a pinch of baking powder to make them fluffy, 2 tablespoons of cocoa for an intense chocolate flavor, and a pinch of salt to balance the flavors. Finally, add sour cream little by little until the dough becomes pliable but not sticky.

After the dough is prepared, divide it into two equal parts, thus forming two layers. Now, roll out the first layer in the prepared tray, spreading it evenly to cover the entire surface. Then, we move on to preparing the filling. In another bowl, beat 6 egg whites until stiff peaks form, gradually adding 200 grams of sugar until we obtain a glossy meringue. Finally, incorporate 200 grams of coconut, mixing gently to avoid losing the air from the meringue. This delicious filling is spread evenly over the first layer in the tray, and then the second layer is added on top.

After assembling the cake, we place it in the preheated oven, allowing it to bake until it turns golden. Once baked, it is important to let it cool well to achieve a perfect texture. Meanwhile, we take care of the delicious cream that will be added on top of the cake. In another bowl, beat 6 egg yolks with 5 tablespoons of flour, 1 tablespoon of sugar, and 3 packets of vanilla sugar. Then, gradually add 500 ml of milk, stirring continuously to avoid lumps. This mixture is placed on the heat and boiled until it thickens, obtaining a fine cream.

After the cream has cooled, beat 250 grams of butter (like Rama cubes) with 200 grams of sugar until fluffy. Then, incorporate the egg yolk cream, mixing well until everything is homogeneous. This delicious cream is spread evenly over the cooled cake, and for decoration, we can sprinkle cocoa or grated chocolate on top. Let it chill for about half an hour, after which the cake is ready to serve. It is ideal to be enjoyed alongside a cup of coffee or tea, adding extra flavor to any occasion. Enjoy your meal!
