Cherry Muffins
Preparation
1. To start making these delicious cherry muffins, make sure the margarine is at room temperature so that it mixes easily. In a large bowl, add the margarine and powdered sugar. Use a mixer and beat the mixture until it becomes fluffy and creamy, with an airy texture. This is the base of the recipe and will help achieve fluffy muffins. Then add the eggs, one at a time, ensuring you incorporate each well before adding the next. At this point, drizzle in the vanilla essence and milk, mixing continuously to achieve a homogeneous mixture.
2. In another bowl, mix the flour with the baking powder, ensuring the ingredients are well combined. This step is crucial as the baking powder will help the muffins rise during baking. Gradually incorporate the flour mixture into the margarine mixture, mixing with a spatula or with the mixer on low speed, until there are no traces of flour left. It is important not to overmix to keep the muffins soft and fluffy.
3. Prepare the cherries: wash them well and set aside about 15 cherries with stems for decoration. The other cherries should be pitted, and some of them, about 10-15, will be turned into a puree using a blender. The remaining cherries can be chopped into small pieces, which will add a pleasant texture to the muffins.
4. In the muffin tins, pour a tablespoon of the batter, then add a few pieces of cherries. Continue to add another tablespoon of batter on top, ensuring the cherries are well wrapped in the batter. Arrange the tins on a tray and place them in the preheated oven at medium heat. Bake for about 30 minutes, or until they turn golden and a toothpick inserted in the middle comes out clean.
5. Meanwhile, you can prepare the glaze. In a small saucepan, add the sugar and cherry puree. Boil the mixture until the sugar completely dissolves, and the mixture reaches a slightly syrupy consistency. Once the muffins have cooled, pour the warm glaze over them, allowing it to settle evenly. Decorate each muffin with the cherries set aside, adding an attractive touch.
6. Finally, place the muffins in the fridge for a short while so that the glaze hardens slightly. These cherry muffins are perfect to be served as a dessert for a special occasion or simply to indulge yourself on an ordinary day. Enjoy!
