Hello! Yesterday afternoon, I decided to enjoy a relaxing day, putting worries aside, especially since the weather outside encouraged us to retreat into the comfort of home. And just when I thought we could enjoy some peace, the phone rang. It was unexpected news: my in-laws were coming to visit! In such a situation, with limited time, I realized I had to quickly prepare some delights, including a cherry cake to please their taste buds. So I immediately got to work, knowing that dessert is always a good start.

I started by mixing the eggs with a pinch of salt and sugar until I obtained a fluffy and airy composition. Then, I began to alternately add warm milk and oil, carefully mixing to achieve a smooth texture. Step by step, I integrated the freshly sifted flour, being careful not to form lumps. The desired consistency is usually a light and creamy batter that will support the cherries without letting them sink completely.

In the end, I added baking soda quenched with a few drops of lemon juice, an important ingredient to ensure even rising of the batter. It is essential to mix well so that the baking soda is evenly distributed in the composition. After I finished with the batter, I poured this wonderful mixture into a prepared baking dish, and then I placed the cherries in an even layer on top. If the cherries are too juicy, don't forget to toss them in a small portion of white flour or semolina so they don't release too much juice during baking.

I put the tray in the oven, setting the temperature to 180 degrees Celsius. The cake needed about 35 minutes to bake perfectly, but it is recommended to check from time to time using the toothpick test. When it was ready, I took it out of the oven, letting it cool a bit, and the sweet-sour aroma of the cherries filled the entire house.

 Ingredients: - 3 eggs - 3 cups of milk (600 ml.) - 1 1/2 cups of sugar (300 gr.) - 1 cup of oil (I used sunflower oil) - salt (a pinch) - 2 teaspoons of baking soda dissolved in lemon juice or vinegar - white flour enough to obtain a flowing dough (a bit thicker than sour cream) - 500 gr. of pitted sour cherries (you can use any fruit of your choice and in season, you can add nuts, raisins, chocolate pieces or Turkish delight).
