To prepare this delicious carrot jelly recipe, we start by peeling the carrots, making sure to remove all impurities. After washing them well, we grate them finely, achieving a smooth texture that will help integrate them into the mixture. We place the grated carrots in a pot and mix them with 500 grams of sugar. It is recommended to use good quality sugar to achieve a uniform and sweet flavor. We let the mixture sit for 3 hours, during which the sugar will extract the natural juice from the carrots, turning into a sweet and fragrant paste. It is important to stir occasionally to ensure that the sugar dissolves completely and combines well with the carrots.

After 3 hours, we add 100 ml of cold water, which will help dilute the mixture and facilitate the boiling process. The next step involves adding 3 packets of vanilla sugar, which will provide a special taste, and the grated zest of two lemons for a touch of freshness. We also add the two bottles of lemon or pistachio essence, depending on preferences. We mix all the ingredients well and place the pot on low heat, boiling the mixture until the liquid reduces significantly, thus concentrating the flavors.

Meanwhile, we prepare the gelatin. We dissolve a sachet of gelatin in 100 ml of cold water and let it soak for a few minutes. After that, we gently heat the mixture over low heat, being careful not to bring it to a boil, so as not to compromise the properties of the gelatin. Once the gelatin is completely dissolved, we add it to the carrot mixture, stirring well to ensure it is evenly incorporated. We let everything cool for about an hour.

After the mixture has cooled, we prepare to form the jellies. We moisten our palms with cold water to prevent sticking and take a teaspoon of the carrot mixture, forming small balls. This step can be fun, especially if we involve the little ones in the preparation process. Once we have formed all the balls, we roll them in coconut or sugar, depending on everyone's preferences.
