To prepare a delicious caramel cream, we start with a taller pot, about 3 liters, ideal for use on both the stove and in the oven. The first step is to add the tablespoons of sugar to the pot and put it on the heat. It is essential to continuously stir with a wooden spatula or a whisk to avoid burning the sugar. As the sugar melts, it will take on a golden hue, and its aroma will become enticing. Once the sugar has started to caramelize evenly, we will carefully spread it on the walls and bottom of the pot, making circular movements. This process is crucial, as the caramel will provide a special flavor and a wonderful texture to the cream. After completing this stage, we let the caramel cool until it starts to crack, a sign that it is perfect for enveloping the cream.

In the meantime, we focus on preparing the mixture. In a bowl, we beat the eggs together with the sugar until we obtain a homogeneous and fluffy mixture. We add the milk, which will bring additional creaminess, and the vanilla essence, which will provide a refined aroma. It is important to mix all the ingredients well so that there are no lumps. Once the mixture is ready, we will carefully pour it into the pot with caramel.

This bain-marie baking method will help the cream to bake evenly and become fluffy. We set the oven to a temperature of 180 degrees Celsius and let the cream bake for about 45-50 minutes. During this time, we enjoy the aroma spreading in the house, and the cream will acquire a caramelized hue on top and will set beautifully.

After the baking time is over, we let the cream cool for a few hours in the refrigerator. This step is essential, as it allows the flavors to intensify and the texture to become perfect. Once the cream has cooled, we will carefully drain the caramel from the pot, then use a knife to detach the edges of the cream. With a quick and steady motion, we invert the cream onto a plate, being careful not to break it.
