Boil the mixture for about 10-15 minutes until the bananas become soft and break down easily.

After the mixture has boiled, let it cool slightly, then transfer it to a blender. Blending will turn the mixture into a smooth and creamy puree, full of flavor. Once you achieve the desired consistency, strain the puree to remove any fibers or larger pieces of banana. This step is essential for achieving a velvety texture, ideal for fine desserts.

In a separate bowl, beat 3-4 egg yolks with a mixer on high speed until they become frothy and double in volume. This will add an airy texture and a richness of flavors to the final dessert. It is important to ensure that the eggs are at room temperature, as this contributes to better emulsification. While continuing to mix, gradually add the banana puree, carefully integrating it into the yolk mixture.

Once everything is well combined, you can also add a pinch of salt and, if desired, a teaspoon of vanilla extract to enhance the flavors. After the mixture is homogeneous, you can pour it into molds or a baking dish. Bake in a preheated oven at 180°C for about 30-35 minutes, or until the surface is golden and a knife inserted in the center comes out clean.
