Jarred vegetable stew

Conserve - Jarred vegetable stew by Alma B. - Recipia

The peppers soften gradually, and the jarred vegetable stew simmers slowly until it reduces. The onion, carrot, rice and tomato purée come together with the peppers in a thick mixture; the pieces remain visible, and the rice absorbs the liquid without the stew running off the spoon. I cut the Kapia peppers into pieces wider than dice, use 4 tablespoons of Secretul gustului vegetable seasoning and let the mixture reduce until it clings to the spoon. Preparation: 45 minutes. Cooking: 158 minutes. Resting: 2 hours and 30 minutes. Total time: 353 minutes. Servings: 18. Approximately 260 kcal and 5 g protein per serving.

Ingredients

  • 200 ml oil
  • 1 kg onion
  • 1 kg carrots
  • 180 g long-grain rice
  • 500 ml cold water
  • 2 kg bell peppers
  • 1500 g Kapia peppers
  • 500 g tomato purée
  • 4 tablespoons Secretul gustului vegetable seasoning
  • 3 bay leaves
  • 1/2 teaspoon ground pepper

Preparation

1. Rinse the rice and leave it to soak for 30 minutes in 500 ml cold water. Drain it in a sieve. 2. Peel the onion and cut it into pieces that aren’t too small. In a deep pan, soften the onion in 200 ml oil over low heat for 10 minutes, until soft. Transfer it to a sieve and let the oil drain back into the pan. 3. Peel the carrots, grate them coarsely and sauté them for 8 minutes in the same pan, in the oil drained from the onion, until softened. 4. Rinse the peppers, remove the seeds and cut them into pieces that aren’t too small. Put them in a large, heavy-bottomed pot and cook over medium heat for 15 minutes, until they start to soften. 5. Add the tomato purée to the peppers and stir for 5 minutes. The mixture becomes red and thick. 6. Add the onion, carrot and drained rice to the pot. Add the vegetable seasoning, bay leaves and pepper. Simmer over very low heat for 2 hours, stirring often and scraping the bottom of the pot; the rice should be soft, and the stew should cling to the spoon. 7. Wash the jars thoroughly and dry them. Fill them with the hot stew and seal with lids. Leave them to cool for no more than 2 hours at room temperature, then put them in the fridge.

Notes

Keep the jars in the fridge and eat the stew within 3 days; filling them while hot does not make it safe for the pantry. The vegetables and sauce are easy to scoop up on toasted bread. A heavy-bottomed pot helps with the long simmer; in a thin-bottomed one, the stew can stick even over low heat. Choose a thick tomato purée, not tomato juice, since the stew already gets liquid from the peppers and onion. Firm Kapia peppers with meaty flesh release less liquid than soft ones and hold their shape better. I got 9 jars, 5 of 800 g and 4 of 400 g; one of the small ones was devoured by the house thieves. I start about six hours before the meal so I don’t rush the cooking or cooling.

Frequently asked questions

Can I replace some of the Kapia peppers with green peppers?

Yes, you can replace up to 750 g of the Kapia peppers with green peppers. The flavor will be less sweet.

Which type of rice holds its shape better?

Choose long-grain rice and avoid round risotto rice; it breaks down more easily and thickens the stew.

What should I do if the stew has stuck to the bottom of the pot?

Move the good part to a clean pot without scraping the stuck layer, so the burnt taste doesn’t spread.
