Preheat the oven to a high temperature, around 220-250°C, and bake the dough for three-quarters of the time. This step is essential to get a well-cooked crust. In the meantime, we clean the potato, slice it thinly and evenly with a mandoline, and fry it in oil, but just a little; it shouldn't have the color of fried potato chips. Remove onto an absorbent napkin.
