To prepare a delicious zucchini, eggplant, and tomato tart, we start by ensuring we have all the necessary ingredients at hand. We will need: 2-3 zucchinis, 2-3 eggplants, 2-3 tomatoes, 200 g of grated cheese, 4 eggs, salt, and pepper to taste. It is important to choose fresh vegetables to achieve a rich flavor and a pleasant appearance.

The first step is to beat the eggs in a bowl, adding a pinch of salt and pepper to give them flavor. These will be the magic ingredient that will bind all the components of our tart. Next, we turn to the zucchinis. We slice the zucchinis into thin rounds and steam them so they soften a bit while retaining their delicate flavor. At the same time, we take care of the eggplants. We slice the eggplants and place them on a hot grill. Without using oil, we fry them until they turn golden and tender. If we notice that the eggplants are drying out too quickly, we lightly sprinkle them with water to keep them juicy.

Once we have all the ingredients prepared, we start assembling the tart. We begin by placing the steamed zucchini slices in a baking dish, ensuring they overlap slightly. On top of these, we generously sprinkle the grated cheese, which will provide a delicious taste and a crispy crust. We continue with the eggplant slices, placing them evenly over the zucchinis, and we add a good portion of grated cheese on them as well.
