- 100 g flavored butter
- 500 g grated cheese
- 500 g fresh mushrooms
- 1 large onion
- 4-5 cloves of garlic
- 1 large sweet red pepper
- 1 bunch of dill leaves
- Salt and pepper to taste

Step by step preparation:

1. Preparing the dough:
In a large bowl, beat the egg with the milk and sparkling water. Add the baking soda and a pinch of salt. Mix well, then gradually add the flour, stirring continuously until you get a thicker dough than pancake batter. Add the chopped dill for extra flavor. Let the dough rest for 10 minutes.

2. Preparing the filling:
Start by cleaning the mushrooms and slicing them thinly. Chop the onion and garlic finely. In a pan, melt 50 g of flavored butter over medium heat. Add the onion and garlic and sauté for 2-3 minutes until they become translucent. Then, add the mushrooms and let them sauté for about 10 minutes until they release their juices. Add 2 tablespoons of grated cheese, season with salt and pepper, and mix well. Remove the pan from heat.

3. Preparing the pepper:
In another pan, melt the remaining butter and add the diced pepper. Sauté for 3-4 minutes until it becomes slightly soft.

4. Assembling the scoverzi:
Start assembling the scoverzi. Take a portion of dough and roll it out into thin sheets. Place a tablespoon of cheese on each sheet, followed by sautéed pepper, mushroom filling, dill, and more cheese. Roll it up tightly to keep the filling inside.
