Spinach and Cream Cheese Roll
To prepare a refined and tasty appetizer, we start with the base, an essential foundation to support the delicious flavors of the filling. The first step is to whisk the egg whites with a pinch of salt until we achieve a stiff foam, which will give the base a fluffy and airy texture. It is important that the bowl and utensils used are completely clean and dry, to ensure a perfect foam.
Meanwhile, the egg yolks are whisked with the oil, mixing vigorously until they become a homogeneous mixture. Then, the spinach puree, which adds nutritional value and vibrant color, is gradually incorporated into the yolks, mixing well to ensure an even distribution. After obtaining a homogeneous mixture, it is time to combine the two mixtures: we carefully add the beaten egg whites, folding from the bottom up, so as not to lose the air in the foam.
After integrating the egg whites, we gradually add the flour, mixing gently until all the flour is incorporated. The resulting mixture is poured into a smaller tray, prepared with parchment paper, and baked in a preheated oven at a medium temperature for about 15 minutes, or until the base turns slightly golden and passes the toothpick test.
While the base is in the oven, we take care of the filling. The frozen baby carrots are boiled in a pot of water and salt until they become soft. After boiling, they are drained and blended until we obtain a fine puree, which is mixed with the cheese, resulting in a delicious and flavorful cream. It is recommended to blend well, so that the cheese integrates perfectly into the carrot puree, providing a uniform consistency.
Separately, another portion of cheese is blended with a tablespoon of sour cream, and then finely chopped dill is added, which will give a fresh and vibrant taste to the entire mixture. After the base has cooled, it is carefully removed from the parchment paper. It is evenly spread with the cheese and carrot cream, and then the dill cream is gently spread, so as not to spoil the aesthetic appearance.
Everything is tightly rolled up, forming an appetizing roll, which will be refrigerated for at least two hours. This resting period allows the flavors to blend perfectly, and the roll to acquire a firm texture, ideal for being cut into beautiful slices. After chilling, the roll is sliced with a sharp knife and served with great appetite. This is an excellent choice for parties or special occasions! Enjoy your meal!
