Savory tart with cheese and zucchini is a delicious recipe, perfect for serving as both an appetizer and a main course. Preparing this savory tart requires a few steps, but the final result will definitely be worth the effort. Start by leaving the puff pastry sheet in the refrigerator the night before to thaw gradually. This will ensure an optimal texture when you bake it.

On the day of preparation, start by washing the zucchinis under a stream of cold water, making sure to clean them well of impurities. Once washed, dry them with a clean towel. The next step involves the onion: peel it, cut it in half lengthwise, and then into thin slices. If you decide to add leeks, use only the white part, which you will wash very well to remove any sand or dirt accumulated between the leaves. Squeeze the leeks well to remove excess water, then, similar to the onion, cut them into thin slices.

In a large skillet, add 2-3 tablespoons of olive oil and heat it over medium heat. Add the onion and leeks and sauté them for about 3 minutes, stirring constantly. Then, add the sliced zucchinis, season with a little salt and pepper, and mix everything together. Let the mixture cook for 10-15 minutes until the zucchinis become soft. Once the mixture has cooled, you can move on to the next step.

In a separate bowl, grate the goat cheese using a large grater (a good alternative can also be cheddar) and cut the mozzarella into cubes. If the mozzarella is wet, dry it well with an absorbent towel to avoid excess water. Line a baking dish with parchment paper and place the puff pastry sheet inside, pricking it here and there with a fork to prevent excessive puffing.

In another bowl, crack the two eggs and beat them lightly with a fork. Add the grated cheeses and the cooled zucchinis, mixing everything until the ingredients are well incorporated. If you want to add basil, tear the leaves into small pieces and incorporate them into the mixture. Then, pour the mixture into the prepared dish, leveling it with a spatula.

Preheat the oven to 180 degrees Celsius and place the dish in the oven. Bake for 30-40 minutes, depending on your oven specifications. It is recommended to watch the tart to achieve a golden color and a crispy texture. After 40 minutes, the tart will be perfectly baked. It can be served warm or cold, making it ideal for any occasion. Enjoy your meal!

 Ingredients: - 1 sheet of puff pastry - 3 zucchinis (I used 2 larger ones) - 200 g robiola cheese (I couldn't find this cheese and replaced it with goat cheese) - 2 eggs - 125 g mozzarella (the package I used weighed 226 g) - 1 medium onion (I used 1/2 onion and 1 leek - just the white part) - 2-3 basil leaves (I didn't use any) - 2-3 tablespoons olive oil - salt, pepper
