Savory mushroom and cheese cake

Savory mushroom and cheese cake is made from a batter of whipped egg whites, grated kashkaval and dill. The mushrooms and onion are sauteed first, then go into the batter, and the cake bakes in two small pans and is cut cold. I keep the mushrooms on the heat until they stop releasing water, as dry as possible. Preparation: 20 minutes. Cooking: 40 minutes. Total time: 60 minutes. Servings: 8. Ingredients
- 6 eggs
- 600 g white mushrooms
- 4 green onions
- 15 g dill
- 3 tablespoons sour cream
- 100 g butter
- 50 g butter for greasing the pans
- 6 tablespoons flour
- 300 g grated kashkaval
- 1 sachet baking powder (10 g)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Preparation
1. The onion is peeled, washed and cut into rings. The mushrooms are cleaned, washed and cut into slices or cubes. 2. Melt 100 g butter in a pan over medium heat. Add the onion and mushrooms and leave on the heat for 10 minutes, until they soften and reduce. Take off the heat and leave to cool. 3. Separate the egg whites from the yolks and beat the whites into a foam with 1/4 teaspoon salt. 4. Add the yolks gradually to the bowl with the whites, mixing gently after each one. Then add 300 g grated kashkaval and the flour mixed with the baking powder, stirring until smooth. 5. Add the dill washed and finely chopped, the sauteed and cooled onion and mushrooms, the sour cream, 3/4 teaspoon salt and 1/2 teaspoon ground black pepper. Mix gently after each addition until smooth. 6. Grease the small pans with 50 g butter, then divide the mixture between both pans. 7. Bake in the oven preheated to 180°C for 25-30 minutes, until golden on top. 8. Cut into slices when cold.
Notes
It looks like a quiche without crust, but it is cut cold and eaten by hand, alongside cheeses, tomatoes and cucumbers. Choose firm mushrooms with the caps still closed, because they saute more cleanly and leave less water in the batter. Chop the dill finely so no long strands stay in the slice. Mushrooms cut into slices show better in the slice than cubes, so choose depending on what you want to see. The cake keeps covered in the fridge for up to 3 days and is also served cold. Contains gluten, eggs and dairy.
Frequently asked questions
What mushrooms can I use instead of white mushrooms?
Porcini or other wild forest mushrooms work, but they hold more water, so saute them until no more liquid comes out, then let them cool.
What if the batter is too runny?
The mushrooms must be well drained and cooled. If the batter is still soft, add a tablespoon of flour, mix, and only then pour it into the pans.
Can it be baked in one pan?
Yes, in a larger pan greased with butter, but check it from 25 minutes, because the batter stays thinner and browns faster.
