To prepare a delicious mushroom and egg sandwich, it is essential to carefully follow the steps to achieve a savory and appetizing result. First, start by washing and cleaning the mushrooms. Choose fresh mushrooms, preferably champignon or pleurotus, which have a pleasant texture and delicate taste. After cleaning them, chop them into small cubes for even cooking. Then, take a medium onion, wash it well, peel it, and chop it finely. The onion will add an extra flavor to your dish.

In a frying pan, heat 2-3 tablespoons of olive oil or sunflower oil. Add the chopped onion and sauté it over medium heat, stirring constantly, until it becomes translucent and starts to soften. Then, add the chopped mushrooms, mixing well. If you wish, you can add 1-2 tablespoons of water to help cook the mushrooms. Season with salt and pepper to taste. Leave the mixture on the heat, stirring occasionally, until all the water has evaporated and the mushrooms begin to fry and caramelize, which will enhance the flavor. When ready, remove them from the heat and let them cool slightly.

In the same pan, add the remaining oil and let it heat well. Then, cut two bell peppers (red or green, according to preference) into thick slices and place them in the pan. Crack an egg in the middle of each pepper slice. To achieve perfect fried eggs, cover the pan with a lid and reduce the heat to low. Let the eggs cook until the whites are firm, but the yolk remains soft, or to your liking. Use a spatula to carefully remove them onto an absorbent napkin to eliminate excess oil.

Now, it’s time to assemble the sandwich. Take two slices of fresh bread (preferably whole grain or rye) and spread a thin layer of mustard or mayonnaise, depending on your preference. Place a slice of cheese on each slice of bread. If the cheese is too large, you can break it in half for a better fit. On top of the cheese, add a portion of the sautéed mushroom mixture and carefully place the pepper slice with the fried egg on top. Cover with another slice of cheese and finish with the second slice of bread.

If you want to add a touch of freshness, you can also add a few leaves of green lettuce between the layers of the sandwich. Serve the sandwich alongside raw cucumber slices and sprinkle some chopped parsley on top for a pleasant appearance and exceptional flavor.
