To prepare a delicious and comforting snack, we will start by making a slightly firmer polenta using high-quality cornmeal. In a pot, bring 3 cups of water to a boil, which you will salt to taste. When the water starts to boil, pour the cornmeal in a rain, constantly stirring with a spatula or whisk to avoid lumps. It is essential to stir continuously over low heat so that the polenta becomes creamy and smooth. Cook the mixture for about 10-15 minutes until it easily pulls away from the sides of the pot. Once the polenta is ready, set it aside and let it cool slightly.

Meanwhile, prepare the cottage cheese. Divide the cheese into two equal portions. In a bowl, mix half of the cheese with finely chopped onion, ensuring that the onion is very minced so as not to ruin the texture of the dish. In another bowl, combine the other half of the cheese with freshly chopped herbs, such as parsley or dill, and if desired, add a little tomato paste for a more intense flavor. Mix the ingredients in each bowl well until you achieve a creamy and homogeneous composition.

Assembling the snack is done in a creative and appealing way. Using 4 cylindrical molds, such as glasses or empty cans without lids, greased inside with a little oil, start adding layers of ingredients. Begin with a layer of polenta, followed by a layer of the cheese and herb mixture, then add polenta again, followed by the layer with cheese and onion or tomato paste. Repeat this process until the mold is full, making sure to finish with a final layer of polenta.

After you have finished assembling all the layers, cover the molds with plastic wrap and refrigerate for at least 30 minutes. This resting time will help firm up the snack, making it easier to portion. When you are ready to serve, carefully invert the molds onto a platter and garnish the dish with fresh slices of tomato, which will add a color contrast and a fresh taste.
