Crispy Polenta Cubes with Thyme – A Quick and Tasty Recipe

If you have leftover polenta from a previous meal, don’t throw it away! You can turn it into a delicious appetizer or side dish with this simple yet extremely tasty recipe for fried polenta cubes. This dish is perfect for adding a touch of creativity to your meals and can be customized according to your preferences.

Preparation time: 10 minutes
Frying time: 10 minutes
Total: 20 minutes
Number of servings: 4

Ingredients:
- 500 g leftover polenta (preferably cooled and hardened)
- 2-3 tablespoons oil (olive or sunflower)
- 1 teaspoon dried thyme
- Salt and pepper to taste

Instructions:

1. Preparing the polenta: Make sure the polenta is well set. If it’s fresh, you can leave it in the fridge for a few hours to firm up. Cut the polenta into cubes about 2-3 cm, ensuring they are uniform for even frying.

2. Heating the oil: In a large skillet, add the oil and heat it over medium heat. Check if the oil is hot enough by adding a small piece of polenta. If it sizzles immediately, the oil is ready.

3. Frying the polenta cubes: Add the polenta cubes to the skillet, being careful not to overcrowd it. Fry them for 5-7 minutes, turning them occasionally with a spatula to brown evenly on all sides. The golden color is an indicator that they are ready.

4. Seasoning: Once the polenta cubes are browned and crispy, add dried thyme, salt, and pepper. Mix well to ensure all cubes are evenly coated with the spices. Let them cook for another 2 minutes to allow the spices to infuse.

5. Serving: Transfer the polenta cubes to a platter lined with paper towels to absorb excess oil. Serve them hot, as an appetizer or side dish alongside meat, on a bed of salad, or with a flavored yogurt sauce with garlic and dill.

Practical tips:
- If you want to add a touch of originality, you can sprinkle the polenta cubes with grated cheese (feta or parmesan) in the last minutes of frying for a delicious crust.
- Replace thyme with other herbs, such as oregano or rosemary, to vary the dish's flavor.
- These cubes can also be made in the oven. Place them on a baking sheet lined with parchment paper, drizzle with oil, and bake at 200°C for 20-25 minutes, turning them halfway.

These fried polenta cubes are not only easy to prepare but also versatile, making them a great addition to various meals. So, the next time you have leftover polenta, don’t hesitate to try this quick and delicious recipe!
