Zucchini are versatile and tasty vegetables, and the recipe we propose today combines the fresh flavors of herbs with the fine texture of zucchini, creating an appetizing dish, ideal as an appetizer or side dish. We start by choosing young and vibrant zucchini, which will prove to be more delicate and flavorful.

The first step is to wash the zucchini well under cold running water to remove any impurities. After cleaning them, cut them lengthwise into thin slices, making sure they are uniform for even frying or baking. You can use a sharp knife or, for a quicker result, a special vegetable grater. At this point, you have two options: either fry the zucchini slices in hot oil until they become golden and crispy, or grill them, obtaining a smoky flavor and a healthier appearance. Regardless of the method chosen, make sure the zucchini is evenly fried or browned.

Once the zucchini are ready, remove them to a tray lined with absorbent paper to drain excess oil. This is the moment when the flavors will begin to reveal themselves. In a container, prepare a mixture of finely chopped fresh herbs, such as mint and basil. These will add a vibrant taste, while garlic, sliced thinly, will provide an extra flavor.

Start layering the zucchini in a dish. Place a layer of zucchini, followed by a generous layer of herbs, slices of garlic, drizzles of vinegar for acidity, and a thread of extra virgin olive oil, which will bind all the flavors together. Continue alternating the layers until you finish all the ingredients, ensuring that each layer is well-seasoned.

After you have completed the layers, cover the dish with plastic wrap and let it chill for about two hours. This resting time will allow the flavors to meld and intensify, making the dish even tastier.
