Preparation:

To obtain the most delicious cracklings, start by preparing the fat. Cut the fat into cubes, considering its type. If the fat contains a bit of meat, cut the cubes smaller, as they will not melt as quickly. If you only have pure fat, you can cut the cubes larger, as they will melt completely. Place a pot on the heat and add the cut fat. It is important to use a pot with a thick bottom to ensure even heat distribution.

After adding the fat, pour 100 ml of water into the pot. This step is essential, as the water will help melt the fat without letting the cracklings burn. Constantly stir the contents with a wooden spatula or a whisk to prevent sticking to the bottom of the pot. As the fat begins to melt, you will notice how lard forms. It is a slow process, but worth the wait.

When the lard has started to form, continue stirring occasionally. Now, it’s time to wait until the cracklings turn nicely golden. When they have reached a pleasant color, remove the pot from the heat. It is time to gradually add the remaining 100 ml of water. Be careful, as the contents will start to bubble and splatter. Don’t worry, it’s a normal phenomenon, and this step will help the cracklings remain softer and not become too hard.

After adding water, leave everything on the heat for another minute. This extra time will ensure a perfect texture for the cracklings. When ready, remove the cracklings using a spatula and place them in a strainer. To remove excess fat, gently press on them so they do not remain too soaked. Place the cracklings in a bowl and add salt to taste, mixing well to evenly distribute the seasoning.

As for the lard, strain it into another bowl and let it cool. This can later be used in various dishes or as a cooking base. Thus, you have managed to obtain not only delicious cracklings but also a quantity of quality lard, perfect for enhancing your meals.
