To prepare a delicious sausage, you have a simple yet impressive recipe that will bring joy to your table. This sausage is perfect for special occasions or simply to treat your family to a savory dish.

We start by choosing the meat. While chicken is the most commonly used, you can easily opt for turkey meat, or even a combination of the two, for a more complex flavor. Cut the meat into long, thin slices, making sure to keep their uniformity so that they cook evenly. This step is essential for achieving a tender and juicy texture.

Once you have prepared the meat, add the remaining ingredients, which may include spices such as salt, pepper, crushed garlic, chopped onion, or herbs like thyme and rosemary. Mix everything very well, ensuring that each piece of meat is well coated with the added flavors. It is recommended to let the mixture marinate for at least 30 minutes to allow the flavors to penetrate the meat better.

Once the mixture is ready, place it in a special oven roasting bag, such as Fino. It is important not to pierce the bag, as indicated in the usage instructions. This will create a favorable environment for the sausage to cook evenly, and the juices to be retained inside, forming a delicious gelatin after cooling. Tie the bag well, ensuring there are no leaks.

Place the bag in a loaf pan and put it in the bottom of the preheated oven at a temperature of 180-200 degrees Celsius, letting it bake for 45-50 minutes. After this time, remove the pan from the oven and place another loaf pan of the same size on top of the bag, adding a heavy object to help press the sausage. This step is crucial for achieving a beautiful and well-defined shape.

Let everything cool until the next day, when you will remove the weights and transfer the pan with the bag to the refrigerator for a few hours. This cooling will help set the gelatin and intensify the flavors. After this time has passed, remove the bag with the sausage from the pan and slice it thinly. Serve the sausage slices with a garnish of fresh vegetables or pickles for a contrast of textures and flavors. This sausage will surely become a favorite dish among those who taste it.
