Cheese Terrine
Not infrequently, we encounter various cheese scraps scattered throughout the fridge that are not enough to make a pie, but which we find hard to simply throw away. When I come across such a situation (quite frequently, unfortunately), I start to recycle, marinate, or combine different types of cheese and give them a new life. Since polenta with 'n' kinds of cheese is already an established recipe in our kitchens, I prefer to frequently prepare a side dish of assorted cheeses that can replace mashed potatoes or rice. This side dish pairs perfectly with barbecues and all kinds of roasts - it reduces the feeling of fullness and shifts the focus from the meat to the cheese combination, unlike mashed potatoes, which are quite neutral and allow the meat to express itself freely.
Therefore, when I notice cheeses that do not have a bright future in the fridge, I grab spices and greens, and the next day I already have a delicious menu prepared. Each cheese pairs well with flavors that compliment its taste: telemea cheese goes perfectly with smoked and dried red pepper, cheese harmonizes with cumin and green onions, ricotta with dill, and cottage cheese with salt and pickled green pepper. All you have to do is mix or mash each type of cheese with the desired ingredients, then arrange them nicely in a mold. Carefully alternate the layers so that they are not only compatible but also complementary in terms of taste and color.
Of course, it is important to mention the marinade I use for meat, including chicken. This can keep the meat fresh for a week, and as the days go by, the meat becomes more tender and develops a delicious taste. The marinade is a mixture of roasted red peppers or bell peppers, salt, pepper, a few flakes of dried and smoked hot pepper (this is the secret that helps preserve the meat), and a splash of Worcestershire sauce. When mixed together, these ingredients become a savory marinade.
The recipe for marinating cheeses can be found on specialized websites, where various preservation methods are presented. The jars never empty, as I always have a stray piece of cheese to add. Thus, as you consume from them, you can continue to add new cheeses, creating a constantly fresh and delicious combination. This approach not only reduces food waste but also gives you the opportunity to experiment with various flavors and textures, turning every meal into a true celebration of taste.
