Discover a simple and quick recipe for cauliflower meatballs, perfect for a healthy meal or a savory appetizer. This recipe combines the delicate texture of cauliflower with a fragrant mix of herbs and spices, and the result is an excellent choice for those looking to reduce meat consumption without sacrificing flavor.

Ingredients:
- 500 g cauliflower (broken into small florets)
- 100 ml milk
- 2 large eggs
- 100 g breadcrumbs (you can use whole wheat breadcrumbs for a healthier option)
- 50 g grated cheese (optional, for a more intense flavor)
- 2 cloves of garlic, finely chopped
- 1 small onion, finely chopped
- 1 bunch of fresh parsley, chopped
- Salt and pepper, to taste
- Oil for frying (preferably olive oil or sunflower oil)

Preparation:

1. Start by bringing a pot of water to a boil. Add a teaspoon of salt and the milk, then add the cauliflower florets. Boil the cauliflower for about 8-10 minutes until tender but not falling apart. Check with a fork; it should easily pierce the florets.

2. Once the cauliflower is boiled, drain it well and let it cool for a few minutes. Then, use a hand mixer or potato masher to mash it. Ensure you get a smooth paste without large chunks.

3. In a large bowl, combine the mashed cauliflower with the eggs, breadcrumbs, grated cheese, garlic, and onion. Mix well until all ingredients are homogenized. Add the chopped fresh parsley, salt, and pepper to taste. If the mixture is too wet, you can add a little more breadcrumbs.

4. Form meatballs with wet hands to avoid sticking. Make golf ball-sized meatballs, then flatten them slightly.

5. In a pan, heat the oil over medium heat. Add the meatballs, 4-5 at a time, and fry them for 3-4 minutes on each side until golden and crispy. Make sure not to overcrowd the pan to allow the meatballs to fry evenly.

6. Once the meatballs are ready, remove them to a paper towel to absorb excess oil.

Practical tips:
- You can experiment with spices, adding paprika, cumin, or even chili flakes for a spicier taste.
- If you want a vegan version, you can replace the eggs with a mixture of flaxseeds and water (1 tablespoon of ground flaxseeds with 3 tablespoons of water).
- These cauliflower meatballs are delicious served with sauces such as tzatziki sauce, yogurt sauce, or even ketchup.

Serving:
Serve the cauliflower meatballs warm, alongside a fresh salad or as an appetizer at a gathering with friends. Their savory taste and crispy texture will make them a favorite for everyone, even those who aren’t fans of vegetables!

This recipe is not only healthy but also versatile, allowing for adaptations based on individual preferences. So enjoy the cauliflower meatballs and let their delicious flavors carry you away!

Ingredients: 1 cauliflower, 1 large onion chopped and fried, then drained of oil, 1 slice of bread soaked in milk (then drained), salt, pepper, soup powder (if desired), dill, 2 eggs, breadcrumbs, oil.
